If you have a new email address then create a new mail account for that email address.
In Thunderbird:
File > New > select 'Existing mail account'
or
Menu Icon > New Messages > select 'Existing mail account'
when creating the mail account, make sure you select the type of mail account you require...Pop or IMAP

If you have the same email address but want to change the server it uses.
If you currently have an IMAP mail account and you are wanting to close it, you would need to get a copy of any emails into Local Folders first.
Synchronise the folder for offline use, then in offline mode get a copy of emails into Local Folders.
If you have a pop mail account, the emails are already on your computer.
To change the server, but not email address:
you will need to know your server settings first.
Thenright click on mail account name in Folder Pane and select 'Settings'
select the Server sEttings for the account
or Tools > Account Settings > Server Settings for the account
Change as necessary
server name:
Port:
Connection Security:
In the left Pane, at the bottom Select 'Outgoing Server (SMTP)
click on 'Add'
create the new outgoing server entering the server details
username: = full email address
then click on OK
then select the account in the left Pane
at the bottom on the right side:
Outgoing Server (SMTP)
click on the drop down selectionand locate the new outgoing server.
then click on OK to save changes.

I want to change the email address of both the app store & iTunes I created an iTunes account then bought a family pack @me.com so everything is not straight forward I have a gmail log in for both iTunes & the AppStore & then more than one Apple ID I have just increased my cloud storage but I am tired of having to use a gmail address for the App Store & iTunes especially since gmail would appear to be less secure that @icloud.com so how do I change this ?
Not a good idea. Apple content is forever associated with the Apple ID that bought it. Apple does not transfer content from one Apple ID to another Apple ID. Apple does not merge Apple IDs. The only Apple ID that can (re)download, update and authorize content for use on Macs, PCs and iOS devices is the Apple ID that bought it.

You can change the login ID address, provided that it is not an @icloud.com, @me.com or @mac.com address. You will need to sign out on all your computers/devices and sign back in again with the new ID.
However, once you have created an iCloud account and chosen an @icloud.com address to go with it you can't change the address (short of creating an entirely new account).
All is not lost, though. You can add up to three 'email aliases' - these are additional addresses (not accounts) which deliver into the same inbox as the main account. (In fact it's a good idea to give out alias addresses, rather than the main address, because if they attract spam you can easily change them.) (New aliases can only be @icloud.com ones; @me.com addresses cannot now be created.)
You should be aware before you start that once you've created an alias you cannot turn that address into a full iCloud account, move it to another account, or reactivate it if you delete it.

When you say "account," do you mean your iTunes library, because your iTunes library is what is on your computer? Your iTunes library does not have an email address. An account that is related to iTunes is your Apple ID (which is an email address) and you use it as your user name to sign in to the iTunes Store, to make purchases. Changing your Apple ID will not make songs disappear from your computer's iTunes library.
If you had an Apple ID and used it to make song purchases from the iTunes Store, and then started using a different Apple ID, you should be able to re-download the songs purchased with the old Apple ID. In iTunes, sign in to the iTunes Store using your OLD Apple ID (and password). That may not be your current email address, but Apple uses it as your user name, so it does not matter.
On the iTunes Store Home screen, click on Purchased under QUICK LINKS. This takes you do the Purchased screen, where you can re-download previous song purchases (for that Apple ID) at no cost.
NOTE: If those song purchases are from more than a few years ago, you may also need to authorize your computer to play (and sync) songs for your old Apple ID.
For songs that were not purchased from the iTunes Store, if they are also gone, you cannot get them back unless you have a backup (or they are still loaded on your old iPod).

If your AppleID is a .Mac or .Me account then you can't change it. But it shouldn't go away.
If it is something else you can. Just log in here (https://appleid.apple.com/cgi-bin/WebObjects/MyAppleId.woa/) and manage your AppleID. Click edit next to the ID and you should be able to simply change it.

You can update the primary email address on your account by tapping on it in Settings > iTunes & App Store on your phone and tapping 'view apple id' on the popup and logging into it, or by logging into it via the Store > View Account menu option on your computer's iTunes or via http://appleid.apple.com
If you do change it you may then need to log out on your other devices (tap on it in Settings > iTunes & App Store) and computers (Store > Sign Out menu option) and then log back in with the updated version -

Follow these steps to change the primary email address for your Apple ID:
Go to My Apple ID (appleid.apple.com), click "Manage your Apple ID," and sign in.
With the Name, ID, and Email Address drawer selected, click Edit next to Apple ID and Primary Email Address.
Enter your new email address.
Ensure that the email address you enter:
Is one that you regularly use since this will be the primary email for your account
Is a valid email address
Is not already associated with another Apple ID you have
Is not an address that ends in @mac.com. @me.com, or @icloud.com
You will be asked to verify the email address to confirm that you can access it and that it belongs to you. When you receive the verification email, click the Verify Now link and sign in using your Apple ID and password to complete the confirmation.

Actually if I am getting it right, that makes it easier. You have your Apple/iCloud ID as an @me.com ID. You have your iTunes account using a gmail Apple ID. If that premise is not correct, then just let me know and we will continue to drill down. If it is right, then I would suggest the following:
Your iTunes library lives on your Mac, and you have built it using your @gmail.com Apple/iTunes ID. To be able to use that library under your @me.com Apple ID, you would need to do the following:
1. Go to the iTunes Store on your Mac, and if the @gmail.com ID is signed in, sign it out
2. Sign into the iTunes Store using your @me.com ID
3. Set up your Billing info
4. With the @me.com ID still signed in, click on Store on the menu at the top of the screen, and click on Authorize this Computer. This will authorize your newly created iTunes account to the Mac
5. You now have made your @me.com ID your Apple/iCloud/iTunes ID
6. On your device, sign out of the iTunes & App store, and sign back on with your @me.com Apple/iCloud/iTunes ID (Settings>iTunes & App Store, click on ID)
7. Go into Manage Your Apple ID and sign on your @gamail.com ID - change the password on that ID to match the password on your @me.com ID
Now you can hook up your device to your Mac, and sync any Music, Apps, or any other purchases from your iTunes library to your device.
Although you could also sign the @me.com ID out of iTunes and sign the @gmail.com address into iTunes and download music directly to your device, it is far easier to sync those @gmail.com purchases via a normal sync process. Here's why - once you sign on a different iTunes ID to your device and download using that ID, the device becomes associated with that iTunes ID, and you cannot associate a different ID to it for 90 days. So, to avoid any loss of usage for your new ID, it is just easier to sync any previous ID purchases directly via iTunes.
You can now purchase and download any iTunes or App Store items directly to your device (OTA) using your new ID.
With the passwords being the same on both IDs, you will save yourself a lot of annoyance going forward when you need to update apps on your device. Whether they were purchased under your old ID or under you new ID, it won't matter. You won't even have to pay any attention to which ID is displaying when you are doing updates...just put in the common password, and you are good to go!
I have an @me.com Apple/iCloud/iTunes ID that I have been using since I got my iPhone 4. However, prior to that, I was using a different ID. I can tell you that I have had a totally seamless transition from the one to the other by using the methodology outlined above. It's like my Apple/iCloud/iTunes ID has always been my @me.com one. I still go into my old Apple/iTunes ID to keep it up to date (password-wise) with my @me.com one, but aside from that, I don't use it for anything anymore. The email address and billing information is totally out of date on it. But it really doesn't matter since it is what I call an "Archived" Apple/iTunes ID for me now.
