ICloud email address

Question

How do I change my email address with iCloud? The old address has been cancelled and I can't access the account to make changes. If I initiate a new account, I will lose all my photos and heaven knows what else.

You can't change your primary email address for iCloud, you will have to create a new account.  To migrate your data to your new account go to Settings>iCloud and turn all synced data (contacts, calendars, etc.) to Off.  When prompted choose to keep the data on your iPad.  Once everything is turned off, scroll to the bottom and tap Delete Account.  Then set up a new account with the correct address and turn syncing for your data back On (if prompted, choose Merge).  This will upload your data to your new account.
When you turn Photo Stream back on it will only begin uploading photos taken after turning it on.  If you have photos in Photo Stream that aren't anywhere else, and your computer isn't syncing with iCloud to download them, prior to deleting the account from your phone use an app like PhotoSync to transfer them from your iPad to your computer.  (Your computer will only import camera roll photos, not photo stream photos so you'll have to use an app like this to transfer them.)
