Depends on what you mean by "standard UK charger".
A current MBP's power supply is known as a MagSafe Power Adapter.
If you mean, will a US-bought MBP work with a UK-bought MagSafe adapter?, then the answer is, yes, of course.
If you mean, will a MagSafe adapter of a US-bought MBP work with the UK mains socket and voltage?, the answer is no for the former and yes for the latter. IOW, there's no problem with the voltage, but the pins won't match, so you'll need an adapter for that, or you'll need a UK MagSafe adapter AC power cord. You should be able to find the adapter in most large hardware stores.

    Video is the magic word for fast CPUs, large screens, maximum RAM and large HHDs.  Ditto what eww says and do not order RAM and HDD upgrades through Apple.  It is much, much less expensive through third party vendors.

    Lion will run on most Intel machines. It will not run on the following machines:
    MacBook Pro (sold before October 2006)
    MacBook (sold before November 2006)
    Mac Mini (sold before August 2007)
    iMac (sold before September 2006)
    It requires an Intel Core 2 Duo (or later CPU). Those machines listed above were all Intel Core Duo machines and with the exception of one of the Mac Minis, an Intel Core Solo. So we're talking 4+ year old machines. I have not tested Lion on a machine with anything less than 2GB of RAM.

    The biggest thing of note so far is that you cannot install/run Rosetta. Which maybe problematic for some users.

I'll need to be able to use it for broadband, as well as normal offline functions. I'm most concerned about the broadband, and about charging it.
    Also, whilst I'm here, any advice on which one to buy would be appreciated! I mainly want it for photos, music, watching DVDs, and writing.

    Now I've just got to get my head round the spec and decide how big a screen I want...
    Hehe... well, that's something that only you can decide; no one else. A general rule is to get the highest spec model that your budget will allow. With regards to screen size (15" or 17") again, only you can decide. I have the 17" flavour and I absolutely love it.
    Pop down to an Apple Retail Store and look at both models.

    Does your mic work in System Preferences?
    System Preferences > Sound > Input
    There is an Input Level meter that should light up when you talk. Just to make sure your mic and Mac are working.
    Which mic are you using? Are  you using the built in mic on an Apple Display? I have Apple's LED display and every time I use Facetime, as in place or take a call, the mic input volume gets reset to a level so low, people can't hear me. I have to manually raise the mic volume back to where I had set it. When I end the call, Facetime resets the volume back to where I set it. If I don't reset the mic volume level on each and every call, people can't hear me.
    I called Apple on this. They downloaded a log file tool to my Mac and took some logs. Then they called me back and said this works as designed. Incredible.
    So, if you are using Apple's LED display, this may be your problem. Note that the mic volume level gets set low and reset back only during a call. If you check it before a call and then after a call, it looks fine as if nothing changed. Open up the Sound prefernces and watch it get reset in real time.

    Apple warranty on portable devices is worldwide. The only related issue you may encounter is the length of coverage. In the EU countries, Apple has been mandated to follow the 2-year minimum coverage after losing a court battle; in the rest of the world, base waranty is just one year, after which you can extend for 2 more purchasing AppleCare. Since the Mac will show up as being sold in the USA, I think Apple won't be obligated to follow EU rules on the unit. And this warranty, however much it lasts, only covers defects, not damage due to use.
    Other issue you may have is getting the desired keyboard. US-purchased MBPs only have a choice of US or Spanish keyboards.

    You do not need a new license. The license file will be found in /Library/Preferences/ and is named, com.microsoft.office.licensing.plist. Be sure it gets transferred and you will be fine. I see no reason why the file would not be in your Time Machine backup nor any reason why it would be restored.

    We can't discuss what Apple is going to do or new products, but it does make a lot of sense if your gut feelings tell you to buy now.
    I got a really bad feeling and ran out and got the last of the 17" MBP's with anti-glare and Snow Leopard.
    Turned out I was right in listening to my gut, the abortion of OS X Lion came out killed my 15", Cupertino HQ was pwned by Flashback and Apple pulled the 17" MBP completely off the market.
    Apple has purposely put the Retinas front and center in their stores, so the majority of the know-nothings buy those. If they thought a bit about buying a machine with future options in upgrade options they would, like you, choose the non-Retina.
    Really if you want choice in hardware, your going to have to switch to a PC. As you can pretty much get anything you need on that platform. Apple's hardware choices have been sealing up and their OS X is turning into iOS, soon it's going to be nothing more than a dumbed down iPad.
    Windows 8 Pro can be downgraded to Window 7 even, and since Win 7 is supported until 2020, you should be set for quite a few more years. The choice of software is vast on Windows and it's sort of the next eveolutionary step up actually.

    I haven't checked reviews recently but there's a difference between bare drives and drives with enclosures.  Western Digital made some of the most reliable drives last time I checked, though the enclosures weren't all that great.  It is convenient to get both in one package but I usually buy a highly rated enclosure and then put a highly rated drive in it myself.  OWC sells some good enclosures but if they put a so-so drive inside of it then the package is only as good as its weakest component.  If you get a package from them, ask them what drive is inside (some vendors have no idea what's inside  -  went to an Apple Store recently and they couldn't tell me what was inside some of their Apple brand enclosures).  My first thought if buying a new drive would be to buy a OWC enclosure with a WD drive, but chek around because I may be out of date.
    10 years ago Seagate was one of the best drives. Now they rate poorly in reviews.
