If I send a text from my phone, will it also show up on every device that I have?? And what about texts I get back

For imessage if you are signed in thru your apple id for all your devices, yes I believe you will receive it all.
NOt sure about text message.

That is why. If you take the time to go into Settings>Messages>Send and Receive. Then uncheck everything but the phone number for each particular device, you should be alright after that.

You need a separate email address but you've already ruled out that solution.

I go into Messages there is a Send & Receive selection. My email address
is showing. I select Send & Receive and mu phone and email address is
there. A check mark is next to my email address. Is this the problem? I

Unfortunately, unless you know the Apple ID, there is absolutely nothing that can be done, you cannot use your mobile device. You may be able to find your Apple ID at Look up your old and forgotten Apple ID

Yes. Go to your iCloud settings on each device and configure what you do and do not want showing up on each device.
Go to Settings>iCloud as well as Settings>iTunes & App Stores

Each of you need to have your own apple id's instead of sharing is the best way. But you can go to each phones settings, messages, send and recieve, and down to start new conversation from, and make sure each of you have your own email address with a check mark beside of it not the same address.

The only other possiblity is that you restored a backup that didn't contain those messages and photos. You would have to know that you did that...

Not if it is truly an iMessage - to/from another Apple device using the iMessage technology.
If it is an SMS or MMS message, that is a cellular text message, and yes, it would show up as part of your cellular carrier's service.
