Backup your iPad first and if something goes wrong, you can restore from the backup, I have never, ever lost anything when I updated any of my iDevices going back to iOS 3.x and I am now on iOS 6.1 the very latest iOS on my Pad 3.
What you should do anytime that you update the device is to transfer purchases from the iPad into iTunes - File>Transfer Purchases - and you should backup the iPad as well. When you update the update the device, if something goes wrong, you can restore from the backup.
If you have any other important files, you may want to transfer them to your computer as well, prior to the update.

When you perform the restore make sure you back up the iPad (itunes will prompt you when you restore), that way it will keep all of the data, if you are restoring on a computer that is not the original one you synced to ensure you right click the ipad in the devices menu on the left in itunes and 'transfer purchases'.
You can ALWAYS re-download app for free using your apple ID that you purchased them with so its not the biggest issue if you lose them.

If you have failed to make sure that any apps purchased on the iphone were transferred to your computer before updating, then you will have to redownload.

You will not lose the apps but you will not be able to update them without using the old ID. If you got a new email address, you can simply change your Apple ID. There is no need to create a new one.

Technically the Music, apps are not hers but yours as your Apple ID was used to get them. And as a consequnce they are tied to your Apple ID.
If she creates her own Apple ID she will need to get her own music, apps, etc...

Back up your phone in iTunes before updating or restoring the phone with iOS 6. Then you'll be prompted to choose between restoring the data on the phone before the update/restore or setting it up as new. Your pictures should still be there afterward as long as you dont set up your phone as a new phone. My pictures on both my iPhone 4s and iPad 2 were still there after I did it.
Its also best to go to your iPhones camera folder and copy all the pictures to your computer. -

You can downloads APPs as many times as you like for free as long as you use the same account that you purchased them with.

I have just backed up my ipad. I want to make sure that iTunes will not reset, if I chose to set the iPad up as a new iPad. I do want to eventually put everything back onto my ipad.
Pictures are not saved in iTunes. All photos transferred from your computer via the iTunes sync/transfer process should remain on your computer.
Photos/videos captured by the iPad or saved on the iPad from a received email, from an iMessage, from a website, or imported from a digital camera or from an iPhone with the Camera Connection Kit can and should be imported by your computer as with any other digital camera - especially before restoring the iPad.
All iTunes content on your iPad - music, movies, tv shows, tones, audio and print books, and 3rd party apps should be in your iTunes library on your computer. -

Before you restore it you should back it up onto a computer with iTunes or back up to iCloud if you have enough iCloud storage available.
