If I update to iOS7 will I lose my apps or any progress in them?

I wish to change to iOS 7, but I don't know if my progress will be lost in any apps/games?
Could you also notify me (if you know) of anything else that I will lose?

Upgrading does not make you lose your apps but things can go wrong which is why you should back up first.
You can redownload your purchased apps.
Open the App Store app > Updates > Purchased
You can also redownload other content purchased from iTunes.
Open the iTunes app > More > Purchased
Apple does not support iOS downgrading. Doing so will void the warranty and support for that device.

    No.  In fact, it is possible to uninstall iTunes and then re-install iTunes without losing any content.
    Removing, updating, and repairing the application has no affect on the media stored on the system.

    What you should do anytime that you update the device is to transfer purchases from the iPad into iTunes - File>Transfer Purchases - and you should backup the iPad as well. When you update the update the device, if something goes wrong, you can restore from the backup.
    However, iTunes should ask if you want to backup before you update, but just in case create the backup yourself before you update. The backup contains your app data and settings  - so make sure you backup first. If something goes awry when you update, with regard to apps, you can download them again for free as long as you use the same Apple ID that you bought them with.
    If you have any other important files, you may want to transfer them to your computer as well, prior to the update.

    Music no, as you can always use those just about anywhere, the only exception is if you purchased copy protected music and the program required to play it hasn't been updated for 10.7, much like your files.

    restoring the the device to factory settings will completely remove everything, including photos, emails, email settings and EVERYTHING else.
    if you are able to login at appleid.apple.com, you can just change your email for your apple ID
    if you can't log in at appleid.apple.com, contact AppleCare, they might be able to send you an email to reset your password, depending on a few factors.

    If it's a genuine factory unlocked phone from Apple you should have no problems. I have had two, a 3GS and now a 4S, and they update and handle just like the locked phones. If it has been hacked in any way, though, all bets are off.

    When you purchase applications on your iOS device, they are tied to your Apple ID so even if you lose them, you can re-download them from your purchase history.
    That said, when you first sync your iPhone to your new computer you'll want to transfer purchases from your iOS device to the computer by following these directions here:

    I should just change the OS and leave all your apps and data alone.  That said, if any of your apps are old and use Rosetta (ppc apps), they won't run under Mountain Lion.
    Make sure you take a good Time Machine or Clone backup before you convert.

    2. Not as long as you're still syncing it with the same iTunes library. If you meant iTunes libraries and not iTunes Store accounts to begin with, you need to use the Transfer Purchases function in iTunes.

    If they're only on the iPad, yes. Connect it to a computer and choose Transfer Purchases from the File menu in iTunes if needed first.
    I can reload music and pics, but don't want to pay again for the few apps I got.
    You don't need to pay for them again if you lose them as long as you're still able to log into the iTunes Store account used to purchase them.

    If you are unable to remember your password, security questions, don’t have access to your rescue address or are unable to reset your password for whatever reason, your only option is to contact AppleCare (or Apple ID Support), upon speaking to an operator you should explain that your problem is related to your Apple ID, this way you will not be charged for assistance, even if you don’t have an AppleCare plan.
    The operator will take you through some steps you may have already tried, however they need to be sure they have exhausted all usual approaches before trying to reset your account, so you should try to be helpful and show patience with the procedure.
    The operator will need to verify they are speaking to the account holder and may ask you some questions that only the account holder could know, and you will need to answer them if the process is to proceed.
    Once the operator has verified your identity they will send a message through to your device which contains an alpha numeric code, which you will need to read back to them.
    Once this has been completed they will send an email to your iCloud email address after a period of 24 hours, so you should check that mail is enabled in your devices iCloud settings.
    Upon receipt of the email, use the reset link provided to reset your password, after which you should be able to make the adjustments to iCloud that you wish to do.
