If i want to buy an iphone from apple, but i don't want to pick a cell phone company just yet, how much would i have to pay to have it unlocked?

I'm asking out of curiosity, because i've seen people use iphones but didnt have a sin card, or cell phone service, just like an ipod touch

Look for a 3rd party repair shop that can fix it in your area. It wouldn't be covered by warranty anyway.

average price for 8GB 1333MHz DDR3 is around $50 - $75 depending on the brand.
why not spend $100 and go with 16GB 1333MHz from Crucial or Corsair.

If your iPhone is out of warranty and without an AppleCare plan, then Apple will not replace the iPhone for free. See the Service Pricing section here:

There are independent iPhone repair services that may be able to do the repair for less than Apple's out-of-warranty charge. Do a web search for "iPhone repair". Note, though, that if you elect to have the iPhone serviced by an unauthorized shop, all further warranty and support will be voided.

Apple does not take trade-ins on iPods other than the recycling credit they give you at retail Apple Stores of 10% off of the purchase price of a new iPod, so unless you are within the return period of whatever store you bought your iPod from, you will need need to sell it yourself as JEM24 suggested.

When you buy a phone from the Apple Store, they are going to automatically attach it to a carrier. I'm not sure if you're with one right now but either way this is the case. The price you're paying for the phone is relative and I'll give you detail as to what that means.
Virgin Mobile: No contracts and month to month
iPhone Cost (32GB: $649)
Verizon: 2yr Contract
iPhone Cost (32GB: $299)
Monthly Bill: $100 (All in)
Now understand the math here. Over 2 years with Verizon, you'll be paying ($100 * 24months) + $299 = $2,700. So you're locked in for 2 years. You'll have to pay a termination fee if you want to leave early which I'm sure will equal so some of the amount balance of the phone for what Verizon bought it at. You're paying less upfront but more over the long term.
With Virgin you might end up paying $649 up front but since there are no contracts, you can leave anytime.

When you have your replacement phone, connect it to iTunes, and during the activation choose the option for "Replace a phone on an existing account".
It will ask you to verify some information in regards to your AT&T account, and then should activate.

In the U.S, the data plan would likely be $20 -30 per month in addition to your voice plan.

I called apple when i bought an Ipad to help decide on a GSM vs CDMA version and was told that if I went to Mexico with a CDMA version of the Ipad (2) that i would call the carrier give them some numbers and they would activate it. When i returned I was to call Verizon and reactivate it in the US. I ultimately got the GSM version so i never tested the theory.
I am now thinking of getting the 4S to use in Mexico permanently but want to use it on a CDMA carrier because it is half the cost per month. But will this work? Thoughts?

There is no such thing as an unlocked CDMA iPhone. All CDMA iPhones are carrier locked and the carriers do not allow unlocking. All legitimatly unlocked iPhones are GSM only The CDMA side is completely disabled in them.
You can only use a CDMA iPhone if the carrier you want to use offers one.
