In Yosemite, how do I change my incoming mail server?

In Yosemite, I can't change my incoming mail server.  I have to use one for my office network, and another when outside the network.  In the older OS I could easily change it (even though is would always rearrange the order of my email accounts).  Now the field for the incoming mail server is grayed out and can't be changed.

And now the solution after an online chat with the great Apple support staff.  In Mail Preferences, Accounts, Advanced tab, uncheck the "Automatically detect and maintain account settings" box.  Save the settings when closing the preferences box.  Then open preferences again and note the incoming mail server box can be changed. 
...now if the software engineers can fix the annoying bug of the order of accounts being changed to "Apple Order" whenever changes are made, the Mail app will be much improved.

    Since you're posting in the icloud forum, I'm going to assume you're using an icloud email account.
    You're not supposed to edit its settings directly.  Quit Mail.  Click your apple >> system preferences >> icloud.  Remove the checkmark beside mail.  Wait a minute and recheck it.  Then try the account in the mail.app again.
    If you've manually added the account because you're not running Lion or Mountain Lion, then you can check the settings in Mail menu >> preferences >> accounts >> select the account.  The correct settings for icloud mail is here:  http://support.apple.com/kb/HT4864

    I'm afraid that AFAIK you've gone through the card. You could try Support, though I don't know how helpful they are likely to be.
    To contact  iCloud Support: if you currently happen to have AppleCare, either because you recently bought Apple hardware or have paid to extend the inititial period, you can contact them here:

    You will need the serial number of the covered hardware.
    If you are not covered by AppleCare, then - in common with other free email services - there is no free support and you may be asked to pay a fee.

    The settings are not generic for all webmail accounts, only your office IT department would know what the server address is for their outgoing email server.  You'll have to ask them about it.

    Hi, was it maybe setup as a MobileMe or dot Mac account in the first place?
    You cannot use .mac or MobileMe as type of Account, you have to choose IMAP when setting up, otherwise Mail is hard coded to change imap.mail.me.com to mail.me.com & smtp.mail.me.com to smtp.me.com, no matter what you try to enter.
    iCloud Mail setup, do not choose .mac or MobileMe as type, but choose IMAP...
    On second step where it asks "Description", it has to be a unique name, but you can still use your email address.
    IMAP (Incoming Mail Server) information:
              •          Server name: imap.mail.me.com
              •          SSL Required: Yes
              •          Port: 993
              •          Username: [email protected] (use your @me.com address from your iCloud account)
              •          Password: Your iCloud password
    SMTP (outgoing mail server) information:
              •          Server name: smtp.mail.me.com
              •          SSL Required: Yes
              •          Port: 587
              •          SMTP Authentication Required: Yes
              •          Username: [email protected] (use your @me.com address from your iCloud account)
              •          Password: Your iCloud password
    Also, you must upgrade your password to meet the new criteria:  8 characters, including upper and lower case and numbers.  If you have an older password that does not meet these criteria, when you try to setup mail on your mac, using all of the IMAP criteria listed above, it will still give a server error message.  Go to   http://appleid.apple.com         then follow directions to change your password, then go back to setting up your mail using the IMAP instructions above.

    Your iCloud email account is automatically set up when you check Mail in System Preferences.
    Go to System Preferences>iCloud, uncheck Mail, restart your Mac, then go back and check Mail again.  This will remove, then automatically set up your iCloud email account again with the proper settings.

    First off there is no such thing as a Thunderbird email account. Email providers issue email accounts and Thunderbird is email client software and not a provider.
    You can look at the server settings in Thunderbird to see the settings it is using or you could get a list from your provider.
    In Thunderbird go to the menu bar and select Tools-Account Settings-Server Settings to see the Inbound settings and Tools-Server Settings-Outbging Server(SMTP) for Outbound settings.
    No menu bar with Tools showing? Press the alt key.

    Did you put the sound in /Library/Sounds (you would have had to create that folder, since it doesn't exist by default), or ~/Library/Sounds (you might have had to create that folder, too)?
    .wav, .aif, .aiff, and .snd are all files I've used and they all work perfectly, so I'm not sure what your problem may be. Did you try using Disk Utility to Repair Disk Permissions, or even removing your com.apple.mail.plist file from ~/Library/Preferences, and then restarting Mail and setting up your accounts again? If not, do those things in order, but Don't Empty the Trash.

    I recently set up two aliases through iCloud and then added them as new email accoutns to my email client on my computer. However, I cannot click on the field to change the incoming mail server. There is a generic greyed out 'mail.example.com', but I cannot change that on either account. I also have squiggly lines nest to the inboxes on the email client. When I click on those, I am asked to put in a password. The only password I know to put in is my iCloud Password, but that doesn't work, and it asks again.
    Can anyone please help?

    I am up against the same problem with a reticent Incoming Mail Server field as I attempt to set up IMAP accounts for my original mac.com alias addresses. I've tried deleting the incomplete account setups, then recreating an identical account using "imap.mail.me.com" without success. Nor have I found any improvement by changing the Account Type from an iCloud IMAP to a plain IMAP account…and back again.
    The field labeled Alias appears to offer a choice of Custom or Edit Aliases but attempts to make a different selection are futile…the setting remains on Custom.
    Curiously, however, my primary mac.com address appears to be operating correctly, though it requires an altogether different IMAP address — po3-imap.mail.me.com.  Presumably, a solution exists; however, it remains elusive and far from intuitive to this observer.  Any insight from more experienced users than I will be gratefully received! Thank you.
    n.b.:  a conversation with an AppleCare specialist left him equally perplexed and questioning whether a mac.com alias email address can, indeed, be set up in iCloud to work alongside ones primary mac.com address.

    In your OSX mail app's preferences, delete the icloud account and then start again by defining it.  (I'm assuming this has to do with an icloud email account and not some other provider's like gmail.)
