Ipad disabled, selected 'Update Option', now what?

I entered my passcode wrong two times, but entered it correctly the final time... (I mixed it up with my iPhone code). Anyway, it decided to disable my access and asked me to connect to iTunes.
This is an old iPad, I stuck it onto recovery mode and iTunes gave me two options.... Update, or Restore?
I selected update and I am trying to download the update file, 30 minutes remaining > however my iPad jumps out of Recovery mode and ruins the process meaning I have to start all over again.
More importantly: Will updating my iPad allow me to try to re-enter the correct passcode??
Any advice is appreciated.

Very old versions of the iOS prior to iOS 5 did not have the option to update over the air by using the Settings app. If your iOS is lower than 5.0 you need to update your iPad while connected to the computer you normally sync with.
First thing to do is start iTunes on your computer and use the menu to check for updates. Your iTunes must be version 11.1 so it you have and earlier version of iTunes on your computer update iTunes to 11.1.
Then start iTunes on your computer and connect your iPad. Select your iPad in iTunes and select General or Summary in the right side panel. Do a backup of your iPad next.
Once the backup is complete click on Check for updates.

    Thanks for the question. The following article provides some solutions if you are having issues with passcode lock:

    If you have never synced your device with iTunes, or you do not have access to a computer
    If you see one of following alerts, you need to erase the device:
    "iTunes could not connect to the [device] because it is locked with a passcode. You must enter your passcode on the [device] before it can be used with iTunes."
    "You haven't chosen to have [device] trust this computer"
    If you have Find My iPhone enabled, you can use Remote Wipe to erase the contents of your device. If you have been using iCloud to back up, you may be able to restore the most recent backup to reset the passcode after the device has been erased.
    Alternatively, place the device in recovery mode and restore it to erase the device:
    1. Disconnect the USB cable from the device, but leave the other end of the cable connected to your computer's USB port.
    2. Turn off the device: Press and hold the Sleep/Wake button for a few seconds until the red slider appears, then slide the slider. Wait for the device to shut down.
    3. While pressing and holding the Home button, reconnect the USB cable to the device. The device should turn on.
    4. Continue holding the Home button until you see the Connect to iTunes screen.
    5. iTunes will alert you that it has detected a device in recovery mode. Click OK, and then restore the device.

    Open the Finder. From the Finder menu bar click Go > Go to Folder
    Type or copy paste the following:
    ~/Library/Preferences/com.apple.finder.plist
    Click Go then move the com.apple.finder.plist file to the Trash
    If that doesn't help, relaunch the Finder >  Relaunch Finder… from the Mac OS X Finder

    Try and force iPad into Recovery Mode:
    1. Turn off iPad. Press and hold the Sleep/Wake button for a few seconds until the red slider appears, slide to turn off.
    2. Connect USB cable to computer; leave the other end alone
    3. Press and hold the Home button down and connect the docking end of cable to iPad
    4. Continue holding the Home button until you see the "Connect To iTune" screen
    5. Release the Home button
    6. Open iTune (make sure you have the newest version of iTune)
    7. You should see "iTunes has detected an iPad in recovery mode"
    8. Use iTune to restore iPad
    Note: You need to be patient and repeat the above many times to recover your iPad

    I understand that your iPad is unresponsive at the Apple logo when attempting to update.  I would recommend going through the troubleshooting steps below. 
    If you see a black screen
    You might need to charge your device before it can turn on. Plug in your device and let it charge for at least 10 minutes (20 minutes for iPad), then try turning it on. 
    You should see a battery icon while your device is charging. If you continue to see a black screen, reset your device. If your device doesn't respond when you press buttons
    Your device might not return to the Home screen when you press the Home button, wake from sleep when you press the Sleep/Wake button, slide to unlock or power off, or it might appear frozen. Try these steps:
    Restart your device.
    If it still doesn't respond, or if it doesn't turn back on, reset your device.
    If your device gets stuck during startup
    When starting up, you might see the Apple logo or a red or blue screen for a long time, or your device might restart again. Try these steps:
    Make sure that you have iTunes 12 or later on your computer.
    Put your device in recovery mode.
    When you get the option to restore or update, select Update. This will reinstall iOS without erasing your data.

    I updated my ipad 2 to ios 8 and it asked for a password, I never had a lock on this device, I guessed the same one I have on my iPhone but that didn't work, now it is completely disabled.   I don't have iTunes and never plugged this iPad into a computer.
    Everything is pointing now to losing all my data, but I cannot!! there are pictures of my best friend that passed away in January, I cannot lose those!  I see lots of people are having this problem  PLEASE help me get my pictures. They are very dear to me.

    I completely understand how you feel.  This has happened to me as well when I updated to IOS 8 when it first came out and now I can't get into my Ipad.  The difference is that I actually had a passcode on it and just typed it in just like the million other times I did and it says that the passcode was "wrong."  I thought it was just a mistake so I did it again and it said it was "wrong again, please try in 15 minutes."  This went on for about a day and when I tried to login again with the passcode it completely locked me out to where it says to "connect to itunes" which I did but the Ipad doesn't show up unless I put it into recovery mode, which doesn't help either because I don't want to restore my Ipad until I back it up first. 
    I even took it to the apple store to the genius bar and explained my situation and they couldn't even help me, saying that unless you have a backup on your computer there is no way to recover your data on your ipad before restoring it.  I thought that was completely ridiculous that it wasn't my fault that the Ipad is disabled after updating to IOS 8 and that there is absolutely NO WAY of recovering your data.  I even asked if there was 3rd party software that could backup the ipad before recovering and they couldn't give me that information either. 
    I have been looking all around the internet for a solution but to no avail.  I hope there is some information out there that can help us because there has to be SOME WAY that you can get into your ipad and backup without having to rely just on itunes and icloud.

    If you have IOS 5 or later, go to Settings > General > Software Update >
    Doing it on computer, you need the latest iTunes. Connect and select iPhone in iTunes, Summary page , click the Check for Update button.

    Everything should be on your computer.  Just sync it back.
    Did you fail to make sure that everything was on your computer before updating?
