Is there a problem currently with ipad access to the Apple server from UK?

MAny thanks, I am a bit of an amateur here! I managed to access my mail on my iPad through my G Mail account, as you suggested. I just can't figure out what is happening with my Yahoo account. When I look at the settings it appears fine, although it says a password is required. When I type the password and enter I get the same message about the server being unavailable. I am reluctant to delete my Yahoo account and re-input in case I inadvertent,y lose other data or contacts. At least I can now see my e mail traffic. Thank you again, this may be down to my stupidity but I use my iPad every day for Yahoo mail and thus far have had no problems. V

You can't change the display in the Mail app, if you are holding the iPad in landscape orientation then the left-hand third will be for navigation, and the right-hand two-thirds will be an email. If you hold the iPad in portrait orientation then the navigation section becomes a drop-down section.

Welcome to the forum, NicoleYM. I don't think the Touch Mail has as many options as the Mac Mail app. However, you could set a standard signature. Go to Settings > Mail, Contacts, Calendars > Signature. There you can type a reply address and hope people see it.
Alternatively, you can go to your GMail account in your web browser and click on Settings > Forwarding and POP/IMAP. There you will have an option to forward all emails (or only some, if you set up a filter) to your other address.

IPad mini mail app display rotation

My iPad mini mail app rotation is locked. No other app or display is affected. How do I unlock? How did it get locked?

Sorry, I should have been clearer. I'm pretty familiar with how my ipad works. There appears to be a legit bug with the software, at least for some users. When I load mail, sometimes it's stuck in one orientation, even if the rest of the ipad apps are able to rotate freely. I don't always notice it because sometimes the ipad is oriented in the same direction as mail, but other times it's not and when you start the mail app, the screen loads upside down. Switch to another app, back to right side up and so on. You have to either turn the ipad over, or kill the mail app by double tapping the home button and ending the program from the list of running apps.
After you do that, the mail app starts to rotate again normally when changing the orientation of the device. No reset is required, by the way, as is posted above - at least on mine. Killing the app alone is enough to 'fix' the problem.
I've seen a number of posts where someone posts the 'fix' as a solution to this issue, but I don't consider it a reasonable resolution. Even if killing the mail app works, the problem just comes back a week or two later, very randomly. So then you end up having to do the 'fix' over and over again whenever the mail app flakes out.
So, I'm wondering when Apple is going to actually fix this issue.

Following IOS6 upgrade I lost my AOL contacts via my Ipad E-Mail.

I was reading my AOL e-mail via the IPAD mail service (not the AOL web site through the browser) and noticed when I went to forward a piece of mail to another person (previously listed) he was gone from my contacts. Then I checked for others and they were all gone. I was looking for a way to restore them to my Ipad E-mail. My assumption is I do not need to have multiple e-mail accounts to have access to my AOL contacts. My assumption is I do not need to purchase a utility program to make them available to me as before since I never used one in the past.

I'm asking because it should bring your contacts to your address book. Did you restore from a backup or setup as a new iPad, then sync with your computer? I'm asking that because when you say "I start typing an address", if you setup a new iPad, it clears your recent email address cache on the iPad. That's if you didn't have them in an address book.
However, if it was saved on your contacts, putting contacts to ON should do it. You can try also going into your contacts and hitting the bottom left refresh arrow.

Thanks Diavonex, but that's what I tried to discribe that I'd already done. I didn't realise it was called the "task bar".
I've done both the things you suggested again, but Mail is still locked into this "white" screen when it is relaunched, and after 10 seconds it crashes back to the app menu page. I seems to be running in the background as it knows new emails are waiting to be read, but you can't get into Mail any more to view anything.
Not sure whether to delete all Mail accounts in Settings and start again, but that seems extreme.
Any other suggestions ?

You cannot passcode lock the mail app with any feature of the iOS.. There is an app that will let you passcode mail but I have no idea how well it works. You can check it out.

If that doesn't work for you, then you have would have to passcode lock the iPad in order to prevent anyone from seeing your mail.

My iPad 2 Mail program shows an erroneous count of messages in the inbox.

My iPad 2 Mail program shows a count of over 1600 messages in the inbox even though EVERY message has been deleted from every mailbox. Tried deactivating and reactivating Mail, quit/restart, all settings to do with removing messages from the server, and still have the erroneous count. Anyone have any clues on what I can try

did you try a reset?
first quit Mail by double clicking the Home button to get to the multitasking screen, then swiping the Mail preview screen upward off the top of the iPad
then do a reset: hold both the Home button and the Power button down for 10+ seconds until the Apple logo appears. Let go promptly when the Apple logo appears and wait another 30+ seconds for the iPad to turn itself on. No data will be lost.
Also in Settings > Mail > your account > Advanced > Move discarded messages into ... is Deleted Mailbox ticked?

You can't log out of your email account in the mail app on the iPad. That's just the way that the iPad works.
however, I'm not sure what you mean by "if you cut the thing off, it just goes back to AOL mail". Are you saying that if you restart the iPad, the mail app opens again? If you quit the mail app completely it opens again automatically? I just don't understand what you are saying,

Try this first - Reset the iPad by holding down on the Sleep and Home buttons at the same time for about 10-15 seconds until the Apple Logo appears - ignore the red slider - let go of the buttons. (This is equivalent to rebooting your computer.)
Or this - Delete the account in Mail and then set it up again. Settings->Mail, Contacts, Calendars -> Accounts Tap on the Account, then on the red button that says Remove Account.

Based on your answer, and the answer to another question (which I didn't see before I asked mine, even tho I searched), I get the impression that iPad Mail is just a different face on web mail, that the messages are only stored on the server, not downloaded and stored on the iPad 2. Is that correct?

My ipad iCloud mail continually freezes ALL of my email when I get spam. How can I change that?

After the latest update, my ipad iCloud mail freezes when I get spam. It freezes all email. I have to go to PC, and erase the mail before I can use it again. So far I haven't found any settings on ipad or iCloud on the PC to limit what email I receive.
The spam messages cannot just be trashed from ipad.
There's got to be a way to stop the spam!

It does, but you can do better then that. You can set gmail as exchange, it will give you even more options.
The only thing that you need to know additional to regular stuff, is that instead of gmail you have to use Microsoft Exchange, and the name of google server is m.google.com. Instructions right here.
