If you purchase an unlocked iPhone it will work on any supported gsm network.
Just FYI, apple will not ship outside the country in which the device is purchased. A device purchased in the Hong Kong website must have a shipping and billing address in Hong Kong.
Also, warranty and support are only valid in the country of origin.

Inserting a SIM card does not lock a phone.
If the device is carrier locked, the only way to unlock it is to contact the carrier to whom it is locked.

by taking it to Hong Kong personally or send it to a friend/relative there
to take to Apple for repair. iPhone internals for US iPhones are different
from the iPhones sold in Hong Kong and other markets. US Apple stores
will not have the same iPhone in stock and so cannot replace it.

Because iPhone warranty/support has always been limited to country of original purchase(except for the EU). This has been true since the original iPhone was released in 2007. I can guarantee you that you will not receive any warranty or support for any iPhone, in India, that was not purchased from an official source in India. Even if you want to pay, they won't touch the phone. All they'll do is laugh & hand it back to you.

ONLY Apple that sells them either on the street or through their online store

As has already been said in the thread above, the Apple USB charger is universal and will work anywhere in the world. All you need is a plug adapter.
