IPod Touch: How to go back to version 2.2.1 if I don't like 3.0

Just wondering if it is possible to go back to version 2.2.1 if I upgrade to 3.0 and don't like it.
I have the full copy of everything on my MacBook - but of course everytime I connect via USP it updates and makes everything the same so if I update to version 3.0 now, then an hour later sync to the Mac - then the version 2.2.1 is gone.
In fact, I am not sure I'd know how to do this -- my iPod is in the automatic sync mode now- would I have to go to manual sync? Any comments or web site links to assist me here appreciated.

If you have iPod1,12.2.1_5H11Restore.ipsw than I presume that you have the iPod Touch 1 Generation.
To downgrade iPod touch from firmware 3.0 to 2.2.1 you have to place your ipod in DFU mode
To enter DFU mode turn your iPod off make sure that it is connected to your Mac or Pc and iTunes is on.
After you turn off completely your iPod press and hold for 10 seconds the home and sleep/wake button, after 10 seconds release the sleep/wake button while holding the home button pressed for another 10 sec.
On your Mac or Pc on iTunes you will see this message if you entered successfully in DFU mode: “iTunes has detected an iPod in recovery mode. You must restore this iPod before it can be used whit iTunes.” once in DFU mode your iPod screen should be black. Press ok then Shift Restore (Pc) or Alt Restore (Mac) browse for the file: iPod1,12.2.1_5H11Restore.ipsw if you have the iPod Touch 1 Generation if you have the iPod Touch 2 Generation you will need the iPod 12.2.1_5H11aRestore.ipsw

    It tells you the devices supported for which the latest iOs 4.3.3 is available. At the very least, if you are not clear on whether or not your iPod is 3rd generation, then attach it to your computer, launch iTunes; select your device from the side bar and click "Update" on the Summary page. That will tell you if your iPod is eligible for the update.

    You can only update via the ipod with ios 5 or later.
    You need to update via itunes on your computer as always.

    You should have transferred them to your computer regularly and included them in your backup copy of your computer.

    Unfortunatly, you are going to have to restore you ipod, which means that you will lose you data. If you have songs/videos that are not on your computer's iTunes, then you can use a third party program to do that such as 4Media Ipod to PC Transfer, etc.
    To restore the lock code follow these directions:
    STEP 1. First you have to open iTunes and then sign in. Using the connector cord you have to plug the iPod touch into the computer.
    STEP 2. Now you have to allow iTunes to sync with the iPod touch automatically.
    STEP 3. Now you have to hold down both Menu and Power butons for ten seconds. Then you will be able to see a symbol of a disc and a cable on the screen of your iPod touch. It shows that it is in restore mode.

    STEP 5. Now you have to wait for sometime until restore process is complete.
