Is it possible to transfer my music and photos from my Ipad to my Mac?

My Mac has recently been stolen and all my music and my photos are in my Ipad but as you know I cannot sinc my Ipad with my new Mac. Is there any way I can save all those files and transfer them to my new computer? Do iCloud or iTunes Match can help my?

You'll be able to save your photos, because there is no DRM issues with it.  As for your music, you're history. You cannot authorize iTunes Match from an iOS device, only from a Mac through iTunes.  However, whatever music you purchased from iTunes (going back many years, I found out) can be re-downloaded.  Anything you ripped is gone.
If I might stick my nose into your business, I would strongly suggest you set up Time Machine with your new Mac, and have a back up of everything, including your media.  You don't want to lose those photos.

    Perform a backup to iTunes from the old device and then a restore to the new device, use ITunes to do this.  BTW, always sync photos to a computer to store them safely (use iPhoto on a mac or to a designated folder on a PC).  Never trust an iOS device to keep photos without having them synced to a computer.

    You'd need to use a 3rd party program to remove the content off your iPad, iTunes is only designed to sync purchased content off the iPad (content that was purchased on the iPad). There are several 3rd party offerings, a popular one is called Senuti.

    If you lose or break your iPad, you can sync your iTunes music library to a brand new one. You will lose nothing.
    If you lose your laptop, or it crashes, or becomes virus-infested, you can restore your iTunes music library from your backup. You will lose nothing. Without a backup though, your music resides only on the iPad, and extracting it will require the assistance of third party (paid) utilities. Worse, there is no guarantee they will continue to function after some future iOS upgrade, since the iPad is not designed to work that way.
    There are dozens of questions every day from people who lost their iTunes music when their laptop crashed. Your laptop will crash - it's only a question of when.

    the simplest way would be to connect the two Macs with a firewire cable, boot the source Mac in Target Disk Mode, and copy the entire iTunes folder (not just the iTunes music folder) from /users//music on the source to /users//music on the target (overwriting the iTunes folder in place there).
    do the same with your iPhoto library. see this support article for more information (except, you won't have to option-launch iPhoto)

    If all you care about is music and photos, as you indicated earlier, then you simply need to copy the entire contents of your Music and Pictures folders from the old computer into the Music and Pictures folders on the new computer. A flash drive will work fine as long as it is big enough. If you want to also move over personal files, typically those are in your Documents folder and possibly your Desktop, so don't forgot about those.
    If you want to migrate over all your emails, applications, internet and router settings, web browser favorites, bookmarks, preferences, user names and accounts, etc., then you might consider doing the full migration using Setup Assistant upon the very first boot up. Apple will do this for you, for a fee, as will almost any Apple-authorized computer store (also for a fee, but probably for a bit less than Apple would charge). You can actually do this manually, using the external drive or flash drive, and I have done that myself. But you need to know where the files are to do that properly. The Setup Assistant (which is run upon the very first boot up of the new computer) or Migration Assistant (which is run after you have booted into your new computer at least once) make it pretty easy -- the main thing you need to do is hook the computers up with a firewire cable and follow Apple's instructions; or if that is not possible, the next best thing is to make a complete backup of your old computer onto an external drive using Time Machine (or a cloning program like SuperDuper or Carbon Copy Cloner) and migrate from the backup.
