Is there a way to retrieve information after iphone reset?

What happened was that I had an iPhone before and synced it with iTunes several months ago. And forgot about it.
Then I have received a new iPhone from my work.
Unthinkfully, I have plugged it in into my Mac just to copy some videos into it. All of a sudden, without even asking me, iTunes has immediately reset my new iPhone and restored all the info to the old one. WHAT? WHY? Not even aked me???
First of all I think this is outrageous, that iTunes takes full control of my devices without asking (I only later remembered, that there is this little setting, that tells iTunes not to sync devices automatically, but who could even think that it will not at least ask me if I want to do it - it is a completely new phone that was set-up on a different computer! Why it even does anything to it?
The question is - is there any way to restore any of those erased settings and messages?

iTunes does no such thing especially with an iPhone that has never been connected to a computer.
The first time you connect a new iPhone to iTunes that was or is used to sync with another iPhone or iOS device, you are prompted to transfer the backup for the other iPhone or iOS device to the new iPhone, or set up the iPhone as a new iPhone.
If this iPhone has been synced with iTunes on another computer, when connected to iTunes on another computer a warning message is provided indicating the iPhone is associated with an iTunes library on another computer which must be accepted or declined before going to the next step. None of this is automatic with a new iPhone.
After syncing an iPhone with iTunes on a computer that is set to automatically sync when an iPod or iOS device is connected, the iPhone will be synced automatically when connected to iTunes on that computer only, not when connected to iTunes on any other computer.
An iPhone can be synced with an iTunes library on a single computer only, so a warning message is provided when connecting an iPhone to iTunes that has been synced with iTunes on another computer that all iTunes content on the iPhone will be erased first which must be accepted.

    to supplement OGELTHORPE’s suggestion, another possibility (if you have access to a FireWire cable and a second Mac with a FireWire port) would be to boot your MacBook Pro into Target Disk mode, to have it be treated as an external disk by the second MacBook Pro. You could try copying your personal files from your MacBook Pro to the second Mac in that way. You might also be able to run Disk Utility on the second Mac against your MacBook Pro’s internal disk, to see if the Repair Disk button woudl be available that way.

    Most events I make on iphoto will still be there the next time I open iPhoto, while other event FOLDERS will be there, but pictures in it gone.

    What version of iPhoto? Assuming 09 or later:
    Option 1
    Back Up and try rebuild the library: hold down the command and option (or alt) keys while launching iPhoto. Use the resulting dialogue to rebuild. Choose to Repair Database. If that doesn't help, then try again, this time using Rebuild Database.
    If that fails:
    Option 2
    Download iPhoto Library Manager and use its rebuild function. (In early versions of Library Manager it's the File -> Rebuild command. In later versions it's under the Library menu.)
    This will create an entirely new library. It will then copy (or try to) your photos and all the associated metadata and versions to this new Library, and arrange it as close as it can to what you had in the damaged Library. It does this based on information it finds in the iPhoto sharing mechanism - but that means that things not shared won't be there, so no slideshows, books or calendars, for instance - but it should get all your events, albums and keywords, faces and places back.
    Because this process creates an entirely new library and leaves your old one untouched, it is non-destructive, and if you're not happy with the results you can simply return to your old one.

    If she has backed up her iPhone she can replace that iPhone and set up the new iPhone from her backup.
    You can put the iPhone that went into water into a plastic baggie with either new silica gel packets (preferred) or raw rice and let it sit for  4 - 5 days. After that time remove the phone and connect it to power for at least a half hour. While it is still connected to power reset it by holding down the power and hold button, wait for the Apple logo then let go of the buttons. Might take several tries. If it revives immediately back it up.

    Upgrade MS Office to 2011, or use Apple iWorks, available from the App Store or use the free OpenOffice or LibreOffice. Plenty of choices, just no longer MS Office 2004.

    No, there is no re-cycling bin on the iPad. If you deleted them from the card, and you havn't yet re-used the card, then there may be recovery software that you can get for your computer that might be able to get them back.

    Not sure what you mean by 'turn off calendars'.  Do you mean under 'accounts' that i should delete the  previously synched calendar accounts from the iphone and then turn it back on?  This will restore all the information?
