Your iTunes account won't include your non-iTunes purchased e.g. music copied from CDs etc, nor photos that were synced from a computer.
To get non-iTunes music you will have to go via a computer. If you don't have that music on, for example, an external drive, then there are some programs listed half-way down this page which should be able to copy them back from a device : https://discussions.apple.com/docs/DOC-3991
For photos that were originally synced from a computer then there are apps such as Simple Transfer which can copy them between devices and/or to a computer (though photos are 'optimised' as part of the syncing process, so if you do copy them back to a computer then they might not be the same as they were on your laptop).

Hello there! I just recently tried updating my 32G ipod touch. Low and behold it incurs a problem and my ipod is now stuck in recovery mode. Is there anyway I can retrieve the music and photographs. PLEASE HELP!
This program may geit out of recovery mode. However, if something went wrong with te iOS and it went inot recovery mode then it might not be able to get it out of recovery mode. When in recovery mode the data is not accessable.

Last night I decided that I would go and update my ipod for the first time to the latest version of the system. I completely forgot that I still had not backed up any of my purchased music and apps and of course when the update was finished, I found that all my music and apps had been erased. Unless those messages were part of your last backup, then they are most likely gone and unrecoverable.

If you cannot powerup the phone, there would be no way to recover the photos from the device. Have you tried to just connect it to the computer? If the photos are that important, have you considered possibly a 3rd party repair to just fix the screen so you can access the device, or was there more broken than the screen?

I often record songs at a particular tempo, iTunes Match will then match it and send it back to me at the original tempo, is there anyway I can stop some songs from being matched. At the moment I have turned match off. But I would like to sync playlists.
How old was this backup? It sounds like it was at least several weeks old.
You can look directly in the TM backup for the music.
1. Connect to the external HDD the backup is kept on.
2. Open a Finder window and select the backup drive in the left hand panel. Double click into the folders until you see a list of folders with dates.
These are the incremental backups. You can start at the top or the bottom of the list but I suggest you double Latest/<HDD Name>/Users/<Account Name>/Music/iTunes/iTunes Media/Music. From this location you can start looking for the "missing" music. When/if you find it you can simply drag-n-drop to ~/Music/iTunes/iTunes Media/Music on the internal HDD.
If the music is actually not in the backups (for whatever reason) then you've got a problem.
You can download the uploaded files from the cloud by deleting the affected tracks from the iTunes library (but not the cloud!), highlighting multiple tracks at once, right-clicking and choosing "download." -
My iPad mini says to connect to iTunes, and I try to restore it, but after its done extracting a message comes up saying that device is not found, is there anyway i can fix this? I don't care if i don't get my stuff back, i just want my iPad restored to its starting settings.
If everything else that you try fails, I would try using another computer. Since you don't care about saving any data, any computer that is running the latest version of iTunes might be able to restore the iPad. You could make an appointment at an Apple Store Genius Bar and they can do it for you.
If that isn't feasible for you, try using a different cable, a different USB port. reboot the computer, and reset the iPad by holding down on the sleep and home buttons at the same time for about 10 seconds until the Apple logo appears on the screen. Then try again.
