ITunes 10.5 is opening automatically, even though no device is plugged in

After installing the latest version of iTunes for Windows and iOS5 on my iPads, it opens randomly on it's own even if no device has been plugged in. I thought at first it might be wireless synching (my Zune software opens automatically when it syncs wirelessly, for example) but that's not enabled for any of the devices paired with this PC.
Any ideas why iTunes is opening automatically on it's own? And why it's only happening now? I haven't recently installed anything other than the latest version of iTunes, and I don't have any 3rd party widgets or programs that access the library.

My PC is running Windows 7 Home Premium 64bit. I installed the latest version of iTunes a couple of nights ago.
I updated my iPhone 4 to iOS5 last night before bed (it took quite a few attempts!).
I turned on my PC when I got home from work this evening, and iTunes started itself automatically. Something it's never done before.
I closed it. I used my iPhone... iTunes started itself automatically again.

I do have WiFi sync enabled in iTunes, but why would it keep starting itself and connecting to my iPhone without me specifically telling it to?! I don't want it to do that - I only want it to start when I tell it, I only want it to connect when I tell it. I don't want iTunes to start itself every time I unlock my iPhone!

At first I thought it might be because I was using simultaneously my old iPhone 4S so it somehow realized the emails where being pushed to another device and the it marked as read, this has nothing to do since I have deleted the email account from the iPhone 4S

I have the exact same problem trying to use the Remote app on both my iPhone 3gs and iPad 2 with either my Mac or ATV2. My Remote app used to work on my phone - I can't recall if I ever actually used it with my iPad, but when I tried today, I got all the same results as you did (on both iPad, and then iPhone). I was using my ATV2 to play music from iTunes on my Mac and wanted to use the Remote app, but it would not connect to either device no matter what I did.

If by download bar you are referring to the spinning gears, they are gone in Mail 6.5. There is no indication Mail is checking for Mail. If it finds Mail, it will show it downloading in the lower left hand corner.
Under the Window menu there is Activity. Try opening it and you should be able to see if Mail is checking for new mail.

Sounds to me like the file is probably corrupt. If you had hard drive corruption or damage, that could easily result in recovered files not being fully intact. If you were trying to recover accidentally deleted files, it's possible they might have been partially overwritten before recovering. There are never any guarantees with file recovery.
Without more information on the circumstances that led you to try recovery, it's hard to give advice on what to try from here. You could always try another file recovery tool, like Data Rescue 3. Just be sure you're taking appropriate precautions when doing recovery. See Recovering deleted files.

I seem to be having the same problem on my Windows 8 laptop... I am able to update my iPod Nano through iTunes but my iPhone is not recognized as a device in iTunes. If you think getting your web pages to appear OK in all the major browsers is tricky then dealing with email clients is way worse. There are so many of them.
If you want to bulk email yourself, there are apps for it and their templates will work in most cases...

Even though I have the option "Prevent iPhones, iPads,and iPods from syncing automatically" checked, when I plug my iphone in to my Mac, it will say "Sync in Progress" and the little sync wheel will start spinning next to my device name in iTunes. Now, it's not really syncing, because in iTunes nothing is going on in the status window at the top of iTunes. The iPhone just acts like it is, or is trying to. This behavior just started happening one day, not sure why. How can I prevent it? Do I need to trash or edit an iTunes preference file? Any suggestions or insight? Thanks.

My iPhone has been restarted several times since this behavior started and it still persists. Unchecking and then rechecking the box for the preference is also one of the first things I tried.
