ITunes 11-12 is making me nuts, It used to be so easy

I'm a long time mac user and have used iTunes since it came out. The newer versions with the red icon are so confusing it makes me nuts.
Did they do any testing on civilians to see if an average user could navigate this mess? I liked it when there was a source column. where I could drag and drop any song,movie,ringtone over to an iPod/phone/pad. With I cloud in the mix it makes it worse. Apple tried to help you by storing songs and media in iCloud. OK fine phones and pads have limited storage space.
I'm old school I what the actual files stored locally so I can do what I want with them.
Back to my dislike of the new *improved* iTunes. I think it's gotten too bloated as your master media files library and gatekeeper to IOS devices.
People want to to the most basic things, exchange and manage all the media files from a variety of devices.
I hear they are going to rename iTunes to simply "Music". That is a start. maybe Apple has realized that iTunes has to do too much and needs to be broken down into smaller, easier to manage their media. Maybe an IOS media manager app that has access to the whole suite of iLife apps that makes it EASY to transfer all your media files any way you want. One other rant, it seems to be the default to store a song in iCloud. Doesn't this mean you are burning up cellular data every time you are listening to music in your car? That is what I want to download the files to my devices and put them where I want them.
I'm not the only one that struggles with the newer versions of itunes, as the family computer *expert* for my family, I share their frustration in doing simple tasks that used to be so easy.

Also, you can change the payment method as none as long as there isn't an outstanding balance on the account.

Will not complete a sync without crashing and saying cannot read to the device or something to that effect.

I had this exact issue. Spent over an hour on the phone with apple support, they couldn't resolve. Here is what I ended up doing, that worked.
1. Turned iTunes match off on all my iOS devices
2. Deleted the offending playlists from the iOS device they originated on
3. Started iTunes, let it run (literally) for an hour before it became responsive. First thing I did, before clicking anywere else was disable iTunes match. If I clicked anywhere, it would clock for another hour.
4. Let iTunes run overnight, by morning it had cleaned out the repeating play lists. This got my Mac/iTunes back to an operable state.
5. Restore iPhones from backup in iTunes.
What was causing my issue was a single playlist that was created on an iPhone, then suddenly showed up with several thousand duplicates on my other iPhone. The culprit playlist did not, for some reason, duplicate itself on my two iPads. Apple support seemed to think it was because the problem iPhone tried to sync the playlist to iCloud over and over again unsuccessfully, then it finally went through and populated the thousands of blank/failed playlists which then tried to propigate to iTunes and my other iOS devices. Seems like a reasonable theory.
I have not yet re-enabled iTunes match. So, no idea what will happen if I decide to go back down that rabbit hole.

It's in recovery mode. You don't have a choice. Anything that was on the phone is already gone. If you didn't back it up, there is no way to recover it.

You have already successfully made an Apple ID or you would not be able to post here in the ASC. You should not create another Apple ID, you should use the one that you have or you will create issues for yourself in the future.
Open the iTunes app on your Mac. On the Home pane (little house) scroll to the bottom of the page and click on the flag in the lower right corner. Choose the Japanese flag.
Then at the top of the page in the Quick Links on the right side choose Account. Do notcreate a new Apple ID fill in your current Apple ID and follow the on screen instructions.

If the basics (restart, reset, restore from backup, restore as new) don't work, you'll need to bring the phone to Apple for evaluation

If you have a balance on your iTunes account then that will automatically be used for purchases before your credit card will be - you can't change how items are billed.
You could try gifting items to yourself, you can only gift via a credit card (I haven't tried it but I think that you should be able to gift items to yourself)

My itunes stalls or skips whenever I'm either using my VLC player or Modzilla/Firefox browser and going from page to page especially when I attempt to view a video?

Most YouTube content requires the Flash plugin. Sometimes it's necessary to uninstall then reinstall that plugin.
Uninstall the Flash plugin then reinstall new > Troubleshoot Flash Player | Mac OS
Very important to uninstall the currently installed plugin first.
Now launch Safari and try a video.
If you have the ClickToFlash extension installed, that can prevent Flash based video from streaming. It can also be installed as a plugin in /Library/Internet-Plug-Ins.
And check to see if Safari is running in 32 bit mode. Right or control click the Safari icon in your Applications folder then click Get Info. If the box next to: Open in 32 bit mode is selected, deselect, quit then relaunch Safari.
You may also need to delete the cache associated with Safari .
Open the Finder. From the Finder menu bar click Go > Go to Folder
Type or copy/paste: ~/Library/Caches/com.apple.Safari
Click Go the move the Cache.db file from the com.apple.Safari folder to the Trash.
Quit and relaunch Safari. Try a video.

Yes, No problem at all.

No - you can share the same iTunes account (my wife and I share the same account). But when you sync the iPads, just remember to select the correct content for her iPad and the correct content for your iPad.

It sounds like you would like to delete all the songs from your iPad but still be able to access them in iTunes Match. You can delete all the songs from the Music section of your Usage in Settings by swiping your music left:
