ITunes failed, had to re-install, now problematic.

Question

So my iTunes got an error where it told me to re install because it was missing files. I thought whatever no big deal, so I backed up my libraries, and re-installed. This is where it got ugly. Upon the re-install iTunes wouldn't accept the library files I was dragging in, and that ticked me off. I tabbed out, and saw that it was creating all of its files and media on my desktop, which really irked me.
I went into the settings and changed the filepath for creating the media, hit OK, and restarted iTunes, but it put them right back on my desktop. After this, I tried to get all of my songs back, and after I did after a LONG while of downloading from the cloud and adding back from my library, it started changing the color scheme to windows basic. I despise that scheme, so I did another re-install. No dice, kept changing. Rolled back to a 10.7 version, still changes color scheme.
This is ridiculous, can anyone help me? For now I've uninstalled iTunes and all components completely, and I don't intend to install again without some real answers. Anything you guys have would be appreciated.

I think I did this right, but iTunes still is placing files on the desktop. I ran iTunes diagnostics, and this is the log:
