Itunes on my iPhone has my old email address

I am unable to import my iTunes Library because my iPhone keeps using my old email address & not longer no that password. So how do I change iTune on my Iphone to my new email address etc..????

Your old ID connects to an icloud account containing all your data (email, contacts, etc.) If you then use a different ID, you will connect to a different account, which results in losing all your "apple" data, like emails, contacts, calendars, etc.
However, Apple IDs are also used to connect to an itunes store account, with is different. You can keep using the old itunes store ID to keep all your purchases (but if you change to a different ID, you will lose all purchased items) and use the new ID for icloud (but losing emails, contacts, etc. from the old account).

To change the iCloud ID on your devices you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted (if using iOS 7), then sign back in with your current ID.
If you don't know the password for your old ID, or if it isn't accepted, you will have to temporarily recreate it in order to delete the existing account. To do this, go to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID. Then save any photo stream photos that you wish to keep to your camera roll. When finished go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). My i Could ID has an old email address as the user name, my Apple ID has been updated to my new email address as the user ID.
i CLoud shows how to change the PW but not the UID. MY MAC Mini shows everyday that there is a problem, but yet the cloud seems to play my music fine.

If you mean that Find My Phone is asking for a password to a different Apple ID to your current Apple ID and that ID is a previous version of your current ID, not an entirely different one.
This feature has been introduced to make stolen phones useless to those that have stolen them.
However it can also arise when the user has changed their Apple ID details with Apple and not made the same changes to their iCloud account/Find My Phone on their device before upgrading to iOS 7, or if you restore from a previous back up made before you changed your details and some other circumstances.
The only solution is to change your Apple ID back to its previous state with Apple at My Apple ID using your current password, you don’t need access to this address if it’s previously been used with your Apple ID, once you have saved these details enter the password as requested on your device and then turn off "find my phone" and delete the account from your device. It may take a short while to remove the account.
You should then change your Apple ID back to its current state, save it once again and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

You should still be able to log into an old email account, even if you haven't used it for some time, very few providers delete email accounts.

I changed my Apple ID password due to a phishing email and it started a downward spiral of issues. My original ICloud email address no longer exists. I have tried to sign out/in in itunes that worked but I cannot delete the ICloud account because the field is not editable for apple ID. I tried setting it back to the old email address to turn off Find my IPhone but it will nopt allow because the email address cannot be verified because it no longer exists.

How old it is does not matter IF thats what Apple have as your user ID and if Apple have advised you its OK and it is not... then you need to deal with support where ID information is causing problems.

Go to Settings>Store>Apple ID - tap the ID and sign out, then sign in with the correct account. If that doesn't work, sign out of the account, restart the iPad and then sign in again.
Restart the iPad by holding down on the sleep button until the red slider appears and then slide to shut off. To power up hold the sleep button until the Apple logo appears and let go of the button.
