ITunes restricts NOT OWNED songs

Question

iTunes has taken over a number of songs I have recorded or burned from owned CDs, which WERE NOT PURCHASED FROM iTUNES STORE...
some, in fact, that were burned from owned CDs prior to the invention of iTunes.
Seems, if it can "find" the song title, it thinks it owns the song.
Won't let me burn to MP3 CD for vehicle with in-dash MP3 player I just purchased.
It's such a drag to make audio CDs, then carry to another computer without iTunes to re-convert and burn to CD.
I cannot figure out a way to tell iTunes that I own the music, and NOT Apple

I set the settings in iTunes to produce an "MP3" CD so it works in the car.
It reads the play list, and then kicks back a "list" of songs it refuses to
burn because they were "Purchased from iTunes Store" -- which they weren't
The disk will hold a BUNCH of songs. Even after jimmying around the songs,
and deleting ones iTunes lays claim to, it kicks out more.
I've only purchased about 20 songs from iTunes in my life ... but when burning
my "jimmy Buffett" and "1960s" sets it will kick out 40 to 50 songs.
I can easily burn them via the old G3 running OS 9 (pre-iTunes) and TOAST
but I never boot it up these days -- it's a real pain.
If I play the tune in the FINDER, and re-record it using WireTap (Ambrosia) it
will THEN burn the MP3 easily. But the quality seriously suffers, and it's a real
hassle to re-gain ownership of songs I already own.
Doesn't seem right for iTunes to block me from using my $400 option in a
$38,000 car.
Toons that DO burn, work fantastically in the car, but the text features,
albums, folders, song titles DON'T work unless the CD is burned on
a Windoze machine. I can live without that "feature"
