I'm not clear on what you're saying about your backup. Are you saying that when you connect to iTunes it's asking you to restore from backup even though you already have?

Wipe iPhone/iPad/iPod touch clean
There are a few steps to do:
Switch off iMessage in Settings > Messages
Switch off FaceTime in Settings > FaceTime (iPod touch 4th Generation or later, iPhone 4 or later and iPad 2 or later)
Delete iCloud in Settings > iCloud > Delete Account
Finally Settings > General > Reset > Erase All Content and Settings.
Un-register your device: https://supportprofile.apple.com
Now you can sell/give.
Now, you should get her a new Apple ID to sign in the options above.

I had started using it for a few hours and tried getting the update and now it won't let me activate the phone. I also can't call the helpline because it won't let me leave this screen on the phone that says "Your iPhone could not be activated because the activation server is temporarily unavailable. Try connecting your iPhone to iTunes to activate it, or try again in a couple of minutes." What it says on iTunes after I fill out the activation info is "There was a problem activating your iPhone. Please contact Verizon Wireless at 1-800-922-0204 to have this iPhone added to your account. Click Continue to be able to explore its features and the App Store." Please help this is driving me nuts!

The iPhone communcates differently from iPods, so the fact that an iPod connects is no guarantee that everything is working.

Have you restored the iPod to factory defaults/new iPod? If so then you have a hardware problem. Maybe a loose/brken connector or maybe something else.

Now I cannot get into anything because I don't remember my old password and when I go to the website to recover my password it is of no help cause I don't remember any security questions(over 8 years old) and that email account don't even exist anymore. Now when I go to try I cloud on my new phone all it keeps doing is trying to verify my old iTunes and won't let me use my new apple ID to sign in it keeps sAying to type in my old password from my old apple ID that I just don t have. I just got my new iphone and I gave my phone the same apple ID as my iPod. Then I added $40 to my iTunes thinking that I could buy songs freely. When I went to go buy an album it said that I needed to answer some security questions to complete the purchase. So I clicked yes and it brought me to two questions that I totally forgot the answers to so I hit the link that said if you forgot your answers click here. I clicked it and it brought me to this website that you see all your information about your apple ID. So I went to privacy and security and the same two questions were there. I tried and didn't succeed. I even sent myself the email and I have been trying this for days on end and still never received any emails about those questions. So I thought what if I create a new apple ID then mabe I could transfer ONLY the money over, is this possible?? Because I would hate to see forty dollars go to total waste.

There is no such thing as a "sub-account." Also, you probably mean iTunes library, when you say "account." Your "account" in iTunes is your Apple ID, which is what you use to sign in to the iTunes Store to make purchases. iPods are associated with an iTunes library, not with an Apple ID (iTunes Store account). You'll need to clarify...
So, this is what I think you are saying. You previously shared an iTunes library on a computer with your friend. Your old iPod was synced to that iTunes library.
You got an iPhone, and at that time, you set up your own iTunes library. Is that on a different computer? How does the iPhone affect your question about the iPod?
You got a new iPod. What is your "old iTunes"? Is that the iTunes library you shared with your friend?
