Just downloaded Photos - replacing iPhoto it appears all my projects are now stored on iCloud because there is the image of a cloud on each one.  I don't want anything of mine on the cloud.  Is there no way to keep everything on my computer

All my Albums have a Cloud icon on them. I want to store all photos on my computer
I'm not worried about saving space Do I have no choice about storage?

You don't have to have your photos in iCloud.  In Photo's iCloud preference pane make sure ALL checkboxes are unchecked.
