Hi,
If my wireless bluetooth earphone (Plantronics 510) is connected to my iPhone, when not speaking on the phone, why am I unable to listen to music from the iPod application with my earphone ?

I should have thought of Wikepedia. The A2DP protocol seems to be required to streaming sound and video from the device to the headset. The AVRCP protocol seems to be used to manage the shuffling of the music and video (play, pause, stop, next play, etc ...).
I am looking for the bests wireless headset I can use with my iPhone, iPad and iPod. I has to allow me to listen to music or talk over the phone. Since some headset are not described as compatible with Apple products, I wanted to know what to look for.

    Yes if the BT device supports the profiles supported by the iPod. See:

    I believe the keys on an imac are F11 and F12, for dark / bright respectively.
    Try that, I think it'll work.
    If not, then try out all the "F" keys, one of them will work.

    There is a workaround to listen to music with your mono (non A2DP) bluetooth headset, though I only use it for audio books because of the poorer sound quality.
    The trick is to play the mp3 in Voice Memo app instead of iPod app. You can easily convert any of your music files in the iTunes Library to Voice Memo in the following way:
    1 - Check the category of your existing Voice Memos in iTunes. You will have to copy this categories
         1.1 - On your iPhone, save a voice memo
         1.2 - Connect your iPhone to your Mac or PC, and launch iTunes
         1.3 - Open your iPhone in iTunes, and check the Music tab. Make sure Voice Memos are set to sync
         1.4 - Sync your voice memo to your computer
         1.5 - In iTunes library, find your voice memo, and from the context menu, choose the Get Info
         1.6 - Copy fields Artist, Album and Genre from Info tab
    2 - Convert the selected music file in the iTunes Library to Voice Memo
         2.1 - From the context menu of the selected music file, select Create AAC version
         2.2 - Using the Get info contect menu of the converted file, apply the Artist, Album and Genre settings you copied previously
    3 - Sync your device to have your munsic file available as Voice Memo
         3.1 - Note your voice memo got an automatic name (derived from the date of creation)
         3.2 - In Voice Memo app, you can select which speaker you want to use for playing
    Another advantage of this solution that audio books will not appear in your music library, you can handle them separated

    All iphone have one and only one speaker at the bottom.
    Have you tried another set of earphones?  Maybe they are the problem?
    Have you made sure that the headphones are inserted all the way?
