This usually results from using one of the "Automatic Include" mode options under the "Movies" tab for your iPad device. Simply deselect the "Automatic Include" check box, select the specific files to be synched to your iPad, and press the "Sync" button at the bottom of the "Movies" area.

Your i-device was not designed for unique storage of your media. It is not a backup device and media transfer was designed for you maintaining a master copy of your media on a computer which is itself properly backed up against loss. You don't have to move the songs back into iTunes if you don't want to, the songs are still in iTunes on your computer - you just copied a version of the songs onto the iPad from iTunes.
If you want to remove them from the device itself, just swipe across the song while you are in song list mode in the music app and a red delete button will pop up. You can also tap and hold down on a playlist or a album icon and the X to delete will pop up. It will not work for Genius playlists.
You can also connect the iPad to the computer, launch iTunes, select the iPad on the left side, click on the Music Tab on the right, uncheck all of the music that you want to remove, click on Apply in the lower right corner of iTunes, and that will remove the songs from the iPad.

You need to transfer the iTunes Library from the most recent backup you made before the hard drive was replaced.
You can't transfer the full iTunes Library from the iPad back to iTunes.
There are third-party Windows applications that will transfer data from an iOS device, but they don't re-create the iTunes Library exactly as it was before.

Non-iTunes purchases cannot be transferred from an iDevice to computer via iTunes.
The simplest solution is to simply move the ENTIRE iTunes folder from the old computer to the new computer. Why anyone would choose to make life more difficult by screwing around with transferring purchases from an iDevice and using 3rd party software to extract non-iTunes purchases is beyond me.
IF for some reason there is no backup of the old computer and/or the old computer is no longer accessible, then try google for solutions.
Do yourself a favor going forward, backup your media and other important data.

The only way to do what you want is to log into your wife's iTunes Store account on your iPad. Doing this will lock you out of your account for 90 days.

That has nothing to do with iTunes match. The Remote app on iPad can control the computer's iTunes but not play content from iTunes on your iPad.
To play for example iTunes imusic on iPad
You need to have Home Sharing On.
Check Settings > Music > Home Sharing (key in your Apple ID & password here, must be the same on computer's iTunes)
Start iPad's Music app, tap the ... More (bottom right), tap Shared.

Move the itunes Library.itl file to your exHD.
Then to get itunes to start using it from that new location, press *and hold* the shift key while starting itunes. Choose "use existing library" and browse out to the ITL file that is now on the exHD.
Future app downloads will go to the Mobile Applications folder created there. It will also start downloading the itunes store artwork to the exHD.
You can try downloading a free app to test it.

When you sync movies to the iPad, you view them in the Videos app. Not in iTunes.
Are you sure that the movies were selected to sync? If you are using iTunes 11, it might help if you enable the sidebar by going to View>Show Sidebar from the iTunes menu.
Connect the iPad to the computer and launch iTunes.
Click on the iPad name on the left side under devices. (See above about the sidebar)
Click on the Movies Tab on the right at the top of the iTunes window
Click on all of the Movies that you want to sync.
Click on the Sync Music Heading.
Click on Apply in the lower right corner of iTunes.
You may also have syncing of Movies restricted due to content so check Settings>General>Restrictions>Allowed Content>Movies.
