Why won't it? What specifically are you attempting to accomplish here?
iPhones do not change email addresses, the user sets up an email account(s) on the device.
Are you possibly referring to the Apple ID used on the device?

How do I change the e-mail address associated with Facetime on my iPhone?

On my iPhone, under Settings -> Facetime, if I switch this to "on", I am immediately prompted to provide a password assocaited to an old e-mail address. How do I change this e-mail address?
My app store account is correct, and I don't think this old e-mail is lurking anywhere else on my phone.

Thanks for the reply, but I did not see this space to enter a new e-mail as Facetime was set to "off" and every time I turned it on it wanted me to provide a passowrd for my old, non-existent AppleID.
I just noticed, however, that if you just let it fail to log in with the old e-mail three times, THEN it give you a chance to provide a new e-mail via a new prompt "SIgn in with your Apple ID?", which worked.
So lesson learned: let if fail first, then you can fix it,but not before it fails. :-/

So, you are saying that you set up a brand new Apple ID and then signed into iCloud with it, correct?
Are you also saying both accounts are disabled for Security reasons? If not, why can't you sign on with the one that is not disabled?

All App purchases are tied to your email address, because that is your apple ID. If you cannot access your old email account, you may lose those apps. You can call apple for support and see if they can help you.

After my company changed the e-mail address, I had to change my Apple-ID. How do I update my purchased Apps after the change?

The renamed Apple ID does not update all the Apps but comes up with the old AppleID, but that ID is not there anymore and neither the old or the new password is working
On the FAQ pages I just find a long list of Apps, stores tc. that I have to update, but no explanation on how to do that.
I do not want to buy all the apps again just because I had to change the e-mail address and because of that the AppleID.
It is ok to remove the free ones and load them again, but the paid one?
How is Apple handling such things?

OK, after reading other and similar threads too, I found a solution myself.
Thought to share it.
On my iPhone, after the change was made at the AppleID site, I had to logoff from the old AppleID and then to relogon with the new/changed one. After that I could update all apps again

Hi, fromsouth, and thank you for your reply. When I go to store, there is no place that says "sign out" so I can't do this. My old email is showing, and when I click on it I am asked for my password. I tried my old password that I used with that email, but was told it was incorrect. This is so frustrating! I can't do any ordering on my iPad until this problem is solved. Thanks again.

To change the iCloud ID ("email address") you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted to turn off Find My iDevice, then sign back in with the ID you wish to use. When you do this you may find that the password for your old ID isn't accepted. If this should happen, and if your old ID is an earlier version of your current ID, you need to temporarily recreate your old ID by going to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iDevice on your device, even though it prompts you for the password for your old account ID. Then save any photo stream photos that you wish to keep to your camera roll. When finished go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). Next, go back to https://appleid.apple.com and change your primary email address and iCloud ID name back to the way it was. Now you can go to Settings>iCloud and sign in with your current iCloud ID and password.

I changed my e-mail address and AppleID the other night but the Apple website didn't recognise either account as an appleID. I called the helpdesk and they can't see them on their system either. All items that you download from the store will be tied to the account that you downloaded them with, so you will need to get access to you old account to be able to re-access that account's downloaded - they can't be transferred to a different account. How did you update your account id e.g. via http://appleid.apple.com or on your computer's iTunes ? If on your computer's iTunes then does the new id show in the Store > View Account menu option, or if you select one of the downloaded items in your iTunes library and do 'get-info' (control-I) does the new id show on the item's Summary tab ?

On apple website, seraching on support, the article HT1918 explains.
Log into your apple ID and edit your personal information, where email can be changed as well. All applications as itunes stores, apple store and icloud use this same apple ID, so be aware of this.
