My touch has just started forgetting paired bluetooth devices - any advice?

just over the past 2 days my ipod touch has stopped pairing with my car's bluetooth radio - i have to go into the touch's settings menu to turn re-connect to the car device. it then goes ok until i the next time i leave the car. before yesterday this didn't happen - anyone have any idea what has changed?

Apple Menu / System Preferences / Bluetooth.
Make sure the box next to "Show Bluetooth status in the menu bar" is not checked.

Unplug any peripherals you have except your keyboard, reboot, and check activity monitor for apps. Keep running apps to a minimum to find the App causing the issue.

Though it's unlikely to be wrong if things were set up properly in the first place, as a check go to Mail Preferences>Accounts and check that the server setting for IMAP (incoming) is imap.mail.me.com (not just mail.me.com).
Your next step either way would be to go to System Preferences>iCloud and sign out, then sign back in again. (You can ignore warnings about data disappearing - your calendars etc. will disappear when you sign out but reappear when you sign back in).

What kind of Bluetooth device?
When you turn it off in Control Center, are you looking at the Settings page? If so, you need to close control center for it to reflect the change. When you turn Bluetooth off in Control Center and look on the Status Bar, what do you see? Do you see the gray Bluetooth icon? If you have Settings closed and turn Bluetooth off on the Control Center and then open the Settings app, do you still see Bluetooth enabled?

My iPhone has just started getting the time wrong. Whether I have 'set automatically' on or off, it still sets the clock and hour ahead of the real time. If I reset it correctly, within 10m it has incorrectly reset it. It is amazingly frustrating!

It sounds like you are not able to erase just one letter when backspacing. I recommend following steps in the tutorial below to address an issue like this (you can skip step 2 "Recharge iPhone" because it's not related to this issue). I think the step to reset your iPhone my be particularly useful in this scenario:
To reset iPhone, press and hold the Sleep/Wake button and the Home button at the same time for at least 10 seconds, until the Apple logo appears.

Tom wants you to run Disk Utility from the install disc and then select your boot volume and then click "Repair Disk" to check and correct any directory problems. That will not erase any data files on the disc. If Disk Utility actually makes repairs, do another "Repair Disk" operation, as sometimes one repair will uncover another error. Stop when it gives the volume a clean bill of health without making any repairs. Then restart the machine and see how things work.

If you turned on the FIndMyiPod feature and wifi is on and connected go to iCloud, sign in and go to FindMyiPhone.

My ipad has just started showing 'no sim', although it has worked perfectly with a sim for over a year. I had the SIM card replaced and the new one is shown as activated and ok. Any ideas as the problem obviously lies with the ipad?

Try a reset. Press and hold the On/Off and Home buttons simultaneously until you see the Apple logo, then release. This may take up to 10 seconds. This is the equivalent of a PC re-boot and you will not lose any data.
