Need to combine back ups from months ago and current...help!

All of my contacts were deleted when I shut down/restarted my iPhone 4S. The last back up on iTunes was many months ago, but I have many new calendar, note, photo etc entries since then that I cannot loose.  I performed a new back up on iTunes and have since activated iCloud as well. I now need to restore my contacts from the dated backup on I tunes, but then I will also need to somehow incorporate my latest backup from either iTunes or iCloud, but not sure how to go about any of this without loosing information. When I go to iTunes and click restore from backup it shows as only option iphone, not the two different backup dates (may be that if I click it will give me the option of the diff dates, I just was scared to click it in case another option isn't given....although now that I write this I see nothing to loose as the old info is gone so maybe a mute point). Anyway, is there any way for me to restore my old back up from months ago on itunes and then also restore the latest newer info too?
Just FYI...spoke with Verizon, apple and many diff blogs about trying to just restore my contacts from wherever they went, but no luck with anything so now stuck trying to restore from very old backup on iTunes.

It seems that in a case like this you'd need to reset the device to factory settings and then restore from iCloud backup.
Sadly the reset to factory settings could cause more trouble than its worth.
Apple's iCloud backup, could, but does not let the user restore one app or its data.
You'll also find that even though that App's data is in the cloud, you as its owner do not have access to it.

    I manually deleted back-ups from Time Machine and now I can't empty the trash.

    Using Finder (deleting Time Machine backups) to manage Time Machine files is a mistake. The remedy is somewhat easy, but you will lose all the files on that TM drive.
    If there is nothing elese on the Time Machine drive, try reformatting the drive with Disk Utility. This will effectively remove the files from that drive from the trash. If you have files on this drive, temporarily copy the files to another drive, then reformat the TM drive.

Now the drive is about full, but it is mostly full from backups. How do I delete older back ups that are from almost 3 years ago? I can seem to go in there and do anything. I need more room for my iTunes library.
    I also recently bough a portable G-Drive 500 GB hard drive for my photos. So I was thinking I'll just change my Time Machine backup to that. Or just transfer my iTunes to that one so I can carry it on the road. But that'll take awhile I know, and the connection is not as fast, as its only USB whereas my LaCie is an F-400 connection.

    I take it everything is in the same partition? If so, that's (obviously) a problem. Ordinarily, you'd just let Time Machine handle it -- it will delete the oldest backup(s) when it needs room for new ones.

    That would be an excellent idea. In addition to not having to manually delete old backups, you can let Time Machine back up the other disk, as well as your internal HD. Be sure to format it +Mac OS Extended (Journalled).+

    You shouldn't have to delete anything; Time Machine will delete the oldest one(s) automatically when there isn't room for new ones.
    But if you really want to, you can delete individual backups, or all backups of selected items, via Time Machine (do not use the Finder or Terminal).     If you have other data on the disk, in the same partition, that may be a problem. See #3 in the FAQ.

    Using your account page on your email server, there should be a way to delete all old emails.
    I have mine set to delete automatically after a set time period. In this fashion, all received emails, whatever the device, are only recent mails.

    If it's not on icloud.com any longer you can't restore it from iCloud.  (Contacts are only synced to your iCloud account, and are not included in the iCloud backup.)

    Time machine saves daily back-up for one month, then weekly back-up for all time before 1 month ago.
    Is there a way to find daily back-ups from more than a month ago?
    That is, I seek to access all daily back-ups for a file from 2.5 months ago, rather than just weekly back-ups, so that I can access the past daily interval changes and recover daily deletions for this file.

    No, sorry.  When they're deleted, they're deleted.
    After that long, the space has almost certainly been re-used, so even an expensive, elaborate Data Recovery process or service won't turn up anything useful.

    Well of course you won't have iWeb on a new MacBook from this year.  iWeb has not shipped on new Macs for a long time now and Apple has not sold iLife through its stores or online for over a year and does not support iWeb any longer.
    If you want iWeb now, you will either need to purchase a new copy of iLife or try and find the old install discs from your old Mac and re-install iWeb from that disc.  It also depends on what iWeb version you were using too - iWeb 08 or 09?  If 08, then this is not compatible with Mavericks which will be running on a new Mac, so you'll need iWeb 09 for this.  If you can find your old install discs and they are iWeb 09 then go ahead and use these, but if not, you will have to purchase the iLife 09 or 11 boxed set from Amazon and both of these contain iWeb 09 and you can then install it.
    Also, when you set up your new Mac, did you migrate info over?  If you had built a website on your old Mac, then you need to data file where all iWeb info is stored and that is called your domain.sites file and you need this file to be transferred if you want your website back again.
    Can you get access to thhis file on your old Mac and transfer it?  If you can then fine, you can access your website again, but if not, you are out of luck and you'll have to re-build your website from scratch using iWeb.
    If you don't have iWeb, then now might be a good time to move forward and look at the many alternatives that are out there such as RapidWeaver, Sandvox, and EverWeb which is billed as an iWeb replacement and is very much like iWeb, but with SEO and the ability to create drop down menus built in (check out http://www.everwebapp.com). Other alternatives also include Flux 4, Freeway Pro and Express and WebAcapella 4.
    Have a look and most of these allow you to download free trials so you can try before you buy.

    Sorry those pics might be gone, since you restored from your backup.
    Only way possible if by some possibility you were able to backup your current data to itunes, then you can restore from that backup.
    Open itunes - edit - preference - devices - backup - see if there is an up to date backup.
    If you don't have one then sorry those pics are gone.

    Time Machine makes room for backups as necessary in a complex and sophisticated fashion, and it's not something to mess with lightly. Is there anyone out there who can help me?

    I have done that several times.  In fact, every time I call Verizon with my phone problems, they have me do the same things repeatedly.  I keep telling them I have already done them but they insist they are SURE it will work this time.  It never does.  After doing the factory reset and it still not working correctly, they act like they are confused, almost like I am lying.  I did what you suggested above on the slim chance it would work this time but it did not.  I bought two S5's that day and the other one works perfectly fine.  I know I got a bad phone.  Verizon just does not listen.  It is a bad phone.  I just want a new phone that works properly.  Is that too much to ask?  I bought a new phone that has been bad from day one.  Why oh why do I have to spend hours of my time on the phone, in the store, on the computer, trying to rectify this?  It shouldn't be this difficult!  Help please!!!

    As john noted, eventually that external is probably not going to be big enough, but it certainly is for now. The HD just needs enough capacity to cover the amount of data on your internal HD, not the internal HD's total capacity.
    Format/partition the external as follows and you should be set to go:
    1. Connect the external HD to the MBP.
    2. Open Disk Utility on the MBP.
    3. Select the external HD in the left pane.
    4. Click on the Erase tab.
    5. Choose the Format: Mac OS Extended (Journaled).
    NOTE: if you want to zero the HD (which I always think is a good idea, but does take time), click on Security Options, click the button for Zero Out Data, click OK. The larger the HD, the longer this will take, in some cases several hours.
    6. Click on Erase and wait for the entire process to finish.
    7. Click the Partition tab.
    8. Click on Volume Scheme: and choose the number of partitions (just one in this situation).
    9. Click on the Options button (located underneath the Volume Scheme pane) and select GUID.
    10. Click Apply.
    11. Quit Disk Utility.
    Backup your internal to the external. What application are you using to backup with? I highly recommend both SuperDuper! and CarbonCopyCloner.
