New computer + New iTunes Version = No syncing of new purchases!

A few months back, my husband and I had to purchase a new computer. Once we got the computer up and running, we naturally downloaded iTunes to it so that we could purchase new music to add to both of our iPods (we each have the 30GB iPod w/ video). Previously, we had an older version of iTunes on our laptop and never had an issues downlaoding/purchasing music and importing music form CD's we own. Our iPods always updated and sync just fine.
However, since the purchase of our new computer and downloading the latest version of iTunes to that new new computer, we have nothing but problems and have been extremely disapointed. We authorized our new computer and I have tried all the listed trouble shooting suggestions and nothing works.
Mainly, we cannot play any of our songs loaded in from CD's via iTunes any longer and worst of all, if we purchase new music and/or load a new CD in, the iPods will not sync and add the new music!!! This is very frustrating!!!
The ONLY thing that has worked to get newly purchased or loaded music on to one of our iPods was to "restore" the settings. However, this erased ALL the songs that were loaded on to the iPod before getting our new computer, it erased ALL the playlists we had made, and now we only have about 145 out of the over 850 song we used to have on our iPod. At this time, we have only tried restoring one of our two iPods so that we don't loose everything from both of them!
Any suggestions as to what we can do to solve our problem would be great. I really just wish I could have my old iTunes version back that used to work great and was fun to use. The new iTunes 7.1.1 has been awful to us. :o(
P.S. I am not very "technical" when it comes to this computer stuff, so easy to follow, simple instructions are best! Sorry!!!! I am jsut really not good when things change like this after getting used to using it one way for so long! :o(
