    Sign out in System Preferences>iCloud. This will remove any synced data such as Calendars, emails and Contacts from your Mac, but will have no effect on the data on the server - so that other devices logged into it will continue to see the data.

    Whenever a menu choice is grayed out, that is because you have Restrictions turned on in Settings.  Be sure to turn it off.
    You are confusing an itunes store account with an icloud account.  You two can continue using the same ID for itunes (thus sharing purchased music, apps, etc.), but you really should have separate accounts (different IDs) for icloud, since an account is intended for one user to keep his/her devices in sync.
    To create a new icloud account, go to

    Then go to Settings>icloud and scroll to the bottom of the screen and tap Delete Account.  (have restrictions turned off)  That will disconnect the device from the account but will not delete data in icloud or other devices.  Then sign in using the new ID.

    Oops my bad...I see that during my troubleshooting I inadvertently left Ringtones unchecked in iTunes.

    My phone (4S) was recently stolen.  After purchasing my new 4S, I tried to restore my new one to my previous backup but instead of letting me do that it created a new iCloud account altogether and has since been backing up to that one - in order to restore my phone, I had to connect to iTunes.  When I restart and erase everything trying to back up to the old iCloud backup, it doesn't even list it as an option - only the new Cloud.  How can I remedy this?

    In order to restore to an iCloud backup you have to erase the phone and go back through the setup assistant again as you did when it was new.  If you have any data on your phone now that is not in the backup that you want to save you'll need to do that first.  Then go to Settings>General>Reset and tap Erase All Content and Settings.  You will then go through the setup screens again. When given the option, choose Restore from iCloud Backup (see image below).  You will be asked to enter your iCloud Apple ID and password.  Be sure to enter the ID associated with your old iCloud account so you will be able to access your old backup.  Be sure you are connected to wifi and your charger as this will take some time to finish.  After completing the restore you can either keep this icloud account on your phone and continue using it or go to Settings>iCloud, scroll to the bottom and tap Delete Account, then set up your new iCloud account again by entering the new account Apple ID.

    If it's stuck on verifying it's because she never responded to the verification email that Apple should have sent to the primary email address she used for the Apple ID she set it up with.  She should check her inbox and spam/junk folder for this email and click on the Verify Now link to verify the account.  If the email isn't there, she can go to https://appleid.apple.com, click Manage your Apple ID, sign in, click on Name, ID and Email addresses on the left, then to the right click Resend under her Primary Email Address to resend the verification email.
    Or, you can just delete the account (which is a misnomer since until verified the account isn't really created).

    You can change the Apple ID without any problem. On his device, go to Settings > iCloud > Delete account and login with his Apple ID so he'll get his information. iCloud needs an Apple ID, so if he hasn't got one, he must create an Apple ID > http://appleid.apple.com
    When you delete the iCloud account, all the information will be deleted, so I recommend you to turn off each service before deleting iCloud

    Using iPhoto as the email client in iPhoto does not creatge a sent copy.  iPhoto indicates in the Info drawer if a photo was emailed by iPhoto (under the Sharing section):
    There's no easy way to search for photos that have been emailed. Each photo has to be inspected via the Info tray.
    One could add a keyword to emailed photos which would let a smart album keep track of those photos.
    A better solution, IMO, is to set Mail as the email client (in iPhoto's General preference pane) and use it.  That will give you an sent copy, better access to your contacts and, if you want a theme, numerous photo themes under the Stationary section of Mail.

    You won't be able to delete the existing account in order to set up a new one without the password for the old account.  If your father doesn't remember the password, he can reset it as explained here: iCloud: Change your iCloud password.

    OK, so you can create a separate Apple ID for yourself that you use for your Messages, iCloud, Mail, FaceTime, etc. and keep the one that you have your Apps on as your iTunes "Family" Account.
    Before you set up your new Apple ID, be sure to delete your iCloud account from your device: Settings>iCloud, scroll to the bottom and delete the account. Save your Contacts on your phone so you can merge them with your new iCloud account. Your notes, and Photos will still be on your old iCloud account, but if you want to keep any of your photos on your new iCloud account, it would be a good idea to import all of your photos to your computer first, so you can selectively download them to your device. (Note: only your Photo Stream will go away when you delete your iCloud account. Your Camera Roll will stay in place. It's just a good idea to back up that Camera Roll to a computer or to your new iCloud account immediately once you have set it up.
    You then would set up a brand new Apple ID for you under Manage your Apple ID: Apple - My Apple ID
    Once you get it set up, go into your devices and sign off the following:
    Settings>Messages>Send & Receive, click on your "Family" Apple ID and Sign Out
    Settings>Facetime, click on your Apple ID and sign out
    You will leave your "Familiy" Apple/iTunes ID signed on on the iTunes & App Store, becasuse you willl continue to share your iTunes account with the family. Here is a little more info about using two Apple IDs:

    Once you have your new ID set up, go back into Messages and FaceTime and sign back in with your new ID
    Also, go to Settings>iCloud and sign in with your new ID, and be sure to "Merge" your contacts into your new iCloud account.

    Just so you know, doing an iCloud backup is not going to free up any space on your device. It is only going to back up what is on your device in case you need it to restore your device. If you need to free up space on your device, go to Settings>General>Usage, and under the first Storage section, see what is taking up so much room on your phone.
    Delete any unneeded apps, delete mail, text messages with videos and photos, remove photos from your Camera Roll if you have imported them to your computer, etc.
    If you set up a separate iCloud account, then everything associated with the other iCloud account will no longer be there. Contacts can be preserved by "Keeping them on your Phone" when you delete the original iCloud account (it will ask you if you want to do that). Then, when you add the new iCloud account, you can "Merge" them with that account so you still have them.
    Apps are associated with your iTunes account, and you can have a separate iCloud account from your iTunes account (see the section "Using one Apple ID for iCloud and a different Apple ID for Store Purchases":
