When you activate the new iPad, you will be given the opportunity to set up as new, restore from an iCloud backup or an iTunes backup. Select the iTunes back option. You will have to connect your iPad to your computer, and restore from the backup. Then sync with iTunes as well in order to retrieve all of your apps, photos, music, books and so on.

After you are satisfied that the new iPad is setup just like the old one, you can erase it an give it to your spouse.
Settings>General>Reset>Erase all content and settings. Then your spouse can set up the iPad as if it were a brand new out of the box iPad.

    Your post is a little confusing to me. But the bottom line is that of you are sharing this iPad now and backing up with iCloud, simply restore the new iPad from the backup of the current iPad.
    Back up the current iPad first, so that the backup is as current as it can be. Then activate the new iPad and when you get to a certain point in the process, you will have to opportunity to restore from an iCloud or an iTunes backup. Select the iCloud option.
    This advice is based on the assumption that you are sharing the iPad and all of the apps and data on the device which also means that you are sharing an Apple ID.

    I have just bought a new iPad mini to use alongside my iPad Air.  They'll be used in much the same ways, just the mini being slightly more portable and the Air having a bigger capacity will have more content.
    I'd like to set up my new mini from a backup of the Air (currently the Air doesn't have too much content that the mini will not have enough capacity), but then I'd like them to go their separate ways.  I'd like the mini to look how the Air currently does, but then I'd like to make tweaks to both of the devices, but in different ways to each other.  So, if I set up from back up and then delete an app or 2 off one, will it delete the apps off the other?
    I assume they show up in iTunes as "iPad" and "iPad mini" or something different so I can use both devices with my Apple ID?
    Or is it better to just set up from new and sync the bits I want to my new mini using iTunes.  That doesn't seem like it'd take so long, so might be easier?

    You can restore the Air's backup onto the Mini - if not already in your computer's iTunes library then copy them over from the Air via File > Devices > Transfer Purchases (your iTunes downloads aren't included in a backup, the restore picks them up from your iTunes library).
    Deleting an app off one iPad won't remove it from the other, and yes, when connected to your computer's iTunes they will show up as different devices (you can change the names that they show up as via Settings > General > About > Name) and what you subsequently sync to one of them won't be synced to other unless you choose to sync it.
    If you will be using the same iCloud account on both then you can use Settings > iCloud to control whether your Safari bookmarks, contacts, calendars are kept in sync between the two.

    I am unable to transfer the iBooks contents from iPad 3rd generation running ios 7.1.1 to iPad Air 2 running ios 8.1.2.  Most are owner's manual downloaded from manufacture web-site, a few are insurance documents and all are in PDF's format.  I transfer the purchase and restore the old iPad backup from my Windows 8.1 PC to the new iPad; however, for some reason the iBooks contents do not transfer over.  I contact Apple support for this issue yesterday.  I have been cut off during the transfer to a supervisor and haven't received a call back since.  I want to avoid spending time to search for and download all the manuals, documents again if at all possible.  Any idea what the issue is and how to resolve it?

    I'm not using iCloud, so do not know for sure.  I feel as if I have more control by using iTunes on my computer, to determine what is on my iPad, and what gets deleted.
    If your wife will share the same Apple ID with you, you do not need to remove everything from the old iPad.  She can share your purchased Apps, music, et cetera.
    In iTunes, you can have several iOS devices sharing Apps under a common Apple ID, but you can also "uncheck" specific Apps you do not want on one of your devices.  Each device has an identity so iTunes should remember which App goes on which device during future syncs.
    If your wife will have her own individual Apple ID, you need to go to Settings-General-Reset-Erase All Content and Settings.  This will return the iPad to factory defaults, except it will retain the latest iOS version installed.

    How did you transfer the data? Did you sync the content from itunes or restore the new ipad from the old ipad backup?

    Yeah...this doesn't work for me.  I have an iPad 2 and the new 2012 iPad.  I backed up the iPad 2 after transferring all purchases.  Then I dismounted the iPad 2 and mounted the new iPad.  Did a restore to it. Barely anything came over after all that time.  I've done this three times and slightly different results, but nothing NEAR like my iPad is set up.  Basically only 10-20% of what's supposed to be on there was restored to my new iPad.  And this is after I did a completel re-install of iTunes.

    I have a major problem. I have never been one to download music for free. I dont have a problem with other people that do it, its just a moral ethical thing for me as I am an author who sells digital property and wouldn't want someone stealing my books.     Today, I went to back up my new iPad onto my PC and it kept comming up as "these songs couldnt be synced" or somthing to that effect. Which I just figured at first, it was a glitch. But then As it kept going, I realised it wasn't downloading ENTIRE boughten-on-itunes Albums, including one I just purchased, and two i purchased about a week ago. My friend just kept telling me it was because it was shared music, but it wasnt! All my music is bought off itunes!
    To make matters even worse, When I checked my iPad, The music I bought was GONE! It's about 30 bucks worth too. I'm aware that I can just redownload it onto my iPad because it comes up as purchased under my account. But I really don't wanna have to do that every single time I sync my new iPad. Is there any way to fix this? or does anyone know whats going on? Does this happen to you? I don't honestly know what it could be.

    If your iPad is set up to sync normally with your iTunes library any purchases you make on the devce should automatically transfer to your iTunes library at the next sync. Alternatively you can set up both computer and device to automatically download any purchases made on other, even if you don't get around to syncing them for ages.
    If for some reason the iPad doesn't really treat your iTunes library as its "home" library, and threatens to erase content when you bring the two together, then see Recovering your iTunes library from your iPod or iOS device.

    You don't transfer Apple ID's from one device to another one. You sign out in the settings, )the App Store and iTunes if necessary) and then sign in with the other ID.
    Settings>iTunes & App Stores>Apple ID>Sign out. Them sign in with the other ID. You can sign out of the app store and iTunes as well by going to the featured Atab in the App Store and the music tab in iTunes, swipe to the bottom and access the Apple ID in there.
    You should have erased the iOad before you gave it to her in Settings>General>Reset>Erase all content and settings. That way she could set up the iPad as new with her own Apple ID.
    Be aware of the fact that if you use each others ID's in order to download past purchased content to your own iPads, you will lock yourself out of your own ID as you will have associated your iPad with the other person's Apple ID.
    In other words, if you sign into your wife's ID on your iPad so that you can download an app or an album so that you don't have to pay for it again, you will lock yourself out of your Apple ID for 90 days.
