Numbers 09: Beginner with Advanced expectations

Question

Hello,
I'm trying to develop several spreadsheets in Numbers, so I have many questions.
The first is: can anybody recommend a book that has an in-depth explanation of using formulas in Numbers? I'll take anything in English or German; but prefer German texts because my system is German-language based. I've tried iWork '09 from SmartBooks, but found that the use of formulas in Numbers wasn't detailed enough — they just referred to the templates, but didn't explain the down and dirty how tos
One of the things that I want to do is to create a spreadsheet about how much time I spend on a project. I'd like to create a flyout or popup menü that categorizes the work involved, i.e. sketch, illustration, layout, finalization, office (like phone calls & eMails), etc. The problem is, I can't find any information on how to do these things, perhaps I'm not searching with the right questions.
I'd also like to breakdown the info into other spreadsheets, so I can get a quick summary of what, where and when.
Another thing that I'd like to develop by January is a new spreadsheet for income & expenses. Again using a similar method, so that I can avoid having to manually carry over figures, and so that I can break them down into separate categories / spreadsheets for my tax reports.
Although Apple provides PDF-Handbooks, I get the feeling that I'm »Old School«. I like flipping through real pages and underlining and looking back and forth. I think I could be helped the most with a book recommendation that not only covers what Numbers & Co can do, but how to do it (with advanced techniques). If it has a video with it, so much the better.

Hello...
Select the Cell or Range of Cells. View > Show Inspector. Cells Inspector > Cell Format > Pop-up Menu. The default format will have three choices, the numbers 1, 2, and 3. Select these entries one at a time and replace with your custom text. To add more choices, click the plus button.
If you decide to format more cells in this same way, you can Edit > Copy, Edit > Paste to the new cell locations.
This procedure is clearly spelled out on page 95 of the English version of the Numbers 09 User Guide.
