Possible to get songs OFF your Ipod and onto an external HDD or your PC?

I have songs on my Ipod that are NOT on my PC (thru having to manually manage my library in the past over 2 'smallish' HDDs in my PC).
When I open my Ipod from within Windows I 'see' the songs in the Music folder as .mpeg4 but no song titles so I can't differentiate between them. For example, a song is listed as CVFK.mpeg4, another as DPKQ.mpeg4 etc ...
When I open the Music folder on my Ipod from within i-TUNES I can see the songs I want, I can "highlight" them, right-click and 'COPY' them, but for the life of me I can't seem to 'PASTE' them anywhere...like IN MY LIBRARY which is on my new external USB HDD.
Why be able to "COPY" if you can't do anything with them? It seems you must be able to, but how? I WANT to copy them off my Ipod and put them into that new exteranl HDD that has 75% of my i-tunes library...the other 25% being my Springsteen collection that at the mo is ONLY on my i-Pod.
I am using a 30gb video ipod with latest software (1.2.1), iTunes 7.1.1.5 (latest) and a fully-updated MS Vista Home Premium.
ANY assistance would be GREATLY appreciated.

The transfer of non iTunes Music Store content such as songs imported from CD is designed by default to be one way from iTunes to iPod. However there is a manual method of accessing the iPod's hard drive and copying songs back to iTunes on Windows. The procedure is a bit involved and was written long before iTunes 7 and Windows Vista so it requires a little adaptation as the iPod preferences are no longer in the location described for instance but if you're interested it's posted in this thread: MacMuse - iPod to iTunes
If you prefer something more automated that will let you transfer individual tracks then there are a number of third party utilities that will do what you want. You can use these to retrieve individual music files and playlists from your iPod, this is just a selection. You'll find that they have varying degrees of functionality and some will transfer movies, videos, photos, podcasts and games as well. Have a look at the web pages and documentation, check for Vista compatibility as they may not all have been updated yet.     Connect your iPod to your new computer. If it is set to update automatically you'll get a message that it is linked to a different library and asking if you want to link to this one and replace all your songs etc, press "Cancel". Pressing "Erase and Sync" will irretrievably remove all the songs from your iPod. When your iPod appears in the iTunes source list change the update setting to manual, that will let you use our iPod without the risk of accidentally erasing it. Check the "manually manage music and videos" box in Summary then press the Apply button. Also when using most of the utilities listed below your iPod needs to be enabled for disc use, changing to manual update will do this by default: Managing content manually on iPod

    There's also a manual method of copying songs from your iPod to a Mac or PC. The procedure is a bit involved and won't recover playlists but if you're interested it's available on page 2 at this link: Copying Content from your iPod to your Computer - The Definitive Guide
    Whichever of these retrieval methods you choose, keep your iPod in manual mode until you have reloaded your iTunes and you are happy with your playlists etc then it will be safe to return it auto-sync. I would also advise that you get yourself an external hard drive and back your stuff up, relying on an iPod as your sole backup is not a good idea and external drives are comparatively inexpensive these days, you can get loads of storage for a reasonable outlay.

    Yeah, I lost my "C" Drive, My Documents, My Music, iTunes Music Library, everything.
    I have a HUGE Library of Audio Bibles, Audio Books, Lectures and other Spoken Word material currently residing on my iPod. I had to build most of the tagging and artwork for it myself as much of it pre-dates Gracenote.
    Is there a procedure I can utilize to copy the material from my iPod onto a New "C" Drive?
    Or should I start digging out my back-up disc's and get ready for a long weekend of re-construction?

    For iTunes version 7 or later, then you can transfer purchased iTunes store music from the iPod to an authorized computer by using the "file/transfer purchases from iPod" menu. Note that the maximum of 5 authorized computers applies here.

    For all other non purchased content (your own CDs etc) try this method which works on some Windows PCs.

    Then go to file/add folder, open 'my computer', select your iPod and click 'ok'.
    The music files should transfer to your iTunes.

    Music from iPod to computer (using option 2). This a manual method using "hidden folders" and although it works, it is a little more involved than other methods.
    Much easier ways are to use one of the many 3rd party programs that copy music from the iPod to the computer.
    One of the most recommended is Yamipod. This is a free program that transfers music from iPod back to the computer. However, it does not transfer playcounts/ratings etc.
    Another free program is Pod Player.
    SharePod is also freeware.
    If you want to recover just the structure of playlists from the iPod (and not the actual song files themselves), there's iRepo for Windows. which I understand has this feature along with all the standard features for these programs.
    iPodRip also has the feature enabling you to reconstruct playlists.
    There is also CopyTrans. This does preserve ratings/playcounts etc if those are important to you but this program is not free. It also supports video transfer.

    Let's be clear on one thing here. The manual setting is an iPod setting, not an iTunes one. So, once you've set it to manual (and you appear to have done that correctly), then you can connect it to any number of computers without changing that setting.
    "The grey thing occurs on one pc only"
    This is the thing that I don't understand, if your iPod is set to manual, then it shouldn't happen on any computer. If you connect the iPod that is set to manual to this pc, and then click on it in the source listing, then you would be looking at the songs on the iPod, and they should not be greyed out. When you connect to the "other pc" under these same circumstances, they are not greyed out?
