Re-installing OS... but how?

I went to the Apple store to have them help me reinstall my OS (Snow Leopard Server) on my new Mac Mini. They showed me how to wipe it clean, but then sent me on my way as there was nothing else they could do without charging me.
So, now I really really need to reinstall my OS. And I've tried everything but keep running into problems left and right. So
Here's what I HAVE:
- Mac Mini
- Mac OS X Server 10.6 Install discs
- Macbook Pro with airport wireless connection
- Acer LCD Monitor with HDMI to VGA cable (when this is hooked up to Mac mini, the screen says "Cable Not Connected"...I can only assume this is because the mini doesn't have the drivers for this monitor installed)
- Keyboard
- Mouse
- Firewire cable
- One ethernet cable for mini
Here's what I DON'T have:
- An external optical drive for my mini
Please help! Because there's no OS on the mini, I don't know how to get it to share a display or optical drive with my Macbook. But there's got to be some way to do this... right?

I would attach the keyboard to the Mac mini and startup the mini while pressing and holding the T key. Keep pressing the key until the hard drive appears to have booted the Mac mini and has stopped making noise. Then startup the MBP and connect the mini to the MBP with the FireWire cable. The MBP should see the Mac mini as a FW drive. Put the Install DVD in the MBP and designate the Mac mini as the disk on which to install Mac OS X Snow Leo Server.
The caveat is that the mini may not boot into Target Disk Mode because there is no OS installed.
If that is the case, then I would reverse the machines. I would put the MBP in Target Disk Mode and connect it to the Mac mini with the FireWire cable. I would then startup the Mac mini. Hopefully the mini will look around and discover the bootable OS on the MBP and boot from that. If it does you can hope the mini can now use the display that you have for it. If so, then use the MBP's optical drive to install Server on the mini.
Hopefully one of these ideas will work. I have never been stuck without some form of an optical drive. As soon as I had a few extra pesos I would get the Apple external Superdrive that works with the Mac mini Server and the MacBook Air.
