Recipients get a garbled "chinese" message from Mail - How to change that?

I am sending this:
Bonjour Jocelyne, il semble que le premier message que j'ai envoyé contenait des caractères asiatiques - J'espère que ce message est plus lisible.
She receives that:

As you can see this happens with the French accents. But it also happens when I write in English. Periods (.) will show up on the other end as question marks (?)
This is a problem that I really would like to fix.

This appears to be a rather serious problem. Wouldn't Apple want to create a patch or something to "accomodate" Outlook users? Isn't that problem an invitation to use Thunderbird?
Also, I am not a very technical person. It makes me nervous to open Terminal and try the encoding option. Could you guide me in doing this...

Ok so far. Then I type: defaults write com.apple.mail NSPreferredMailCharset "UTF-8"
Then what ? Do I save it? If so, I save it as what? A window opens asking me if I want to save the main window or all windows??? There are boxes to check: Open this file when Terminal starts up and execute the default shell or login command - or another option is to execute this command (specify complete path) with the additional option to execute command in a shell (???)
All of this means nothing to me unfortunately. Hey! I am just a regular guy and I simply want to be able to send e-maills in a way that my clients will be able to read what I am saying.

We will need more information to be able to assist you.
These message yoy are receiving are probably just a particular type of spam. However it is also possible (unlikely) that your email account is being used to send spam, and that these are the bounce messages.
To tell the difference, you need to look at the email headers. Open the message, then go to the View menu and select Message -> All Headers.
Select the text and post it back here (remembering to obscure your own email address first).

It's not necessary to change the Command N keystroke..
From your Safari menu bar click Safari > Preferences then select the Privacy tab.
Click: Remove All Website Data
Then delete the cache.
Open a Finder window. From the Finder menu bar click Go > Go to Folder
Type or copy paste the following
~/Library/Caches/com.apple.Safari/Cache.db
Click Go then move the Cache.db file to the Trash.
Quit and relaunch Safari to test.
If that didn't help, troubleshoot Safari extensions.
From the Safari menu bar click Safari > Preferences then select the Extensions tab. Turn that OFF, quit and relaunch Safari to test.
If that helped, turn one extension on then quit and relaunch Safari to test until you find the incompatible extension then click uninstall.

While my friend was setting up his iphone, i used my icloud. So now, when i send him a message i get the exact same message from myself. How do i fix this?

While my friend was setting up his iphone because i had recently updated it for him he needed a itunes account to use for "bump" so i could transfer his contacts back. So i used my itunes and icloud account to sign in so he could download that because he didnt have any of those accounts. So when i logged in he was basically me, my name was his phones name aswell. Well i used "bump" his name was the same as mine. I got the contacts to work but now every time i send him a text message, (imessage) i get the exact same message from myself. How to i unverify him off of my icloud so i can be the only one using it?

The fact that the problem only occurs when iphones are texting you leads me to think that iMessage may be the culprit. The fact that it is only iphones using SPRINT however is weird. Try turning imessage off on both yours and your sons phones to see if the problem persists. If it does, it may be a carrier problem.

The short solution is to go to Settings > FaceTime > iPhone Cellular Calls OFF.
However, as Csound points out, you should not really be sharing an Apple ID with anyone. See: How to Stop Sharing an Apple ID.

Not sure what you mean by "booted" from it.
If the Mac OS is installed on the external drive, then it's possible to start up from it, just as you do from your internal drive. Please open the Startup Disk preference pane in System Preferences, and verify that your internal drive is selected as the startup disk.
Assuming that's the case, then it may be that your TM settings have been corrupted. Turn off TM, then move or delete the file /Library/Preferences/com.apple.TimeMachine.plist. Turn TM back on, recreate your settings, and try again.

Are you sure you have the right printer?
In UNIX/OSX printers are virtual links to devices and even with the same name can be trying to reach a printer via another network address, so it thinks it is another printer.
