Refresh Without Updating iOS?

Not sure if I'm doing something wrong, but I can't figure out how, using Configurator 1.4.2, to refresh my iPad carts without automatically installing iOS updates.
If I fiddle around with the settings like changing wallpaper and putting apps into folders, when I run a refresh with "Do not update" chosen, it doesn't actually refresh the iPads back to their default configurations based on the backup I've chosen. That causes problems because the kids are constantly changing wallpapers, rearranging apps into folders that shouldn't be there, etc.
The headache with allowing the automatic iOS updates is that a standard refresh all of the sudden takes quite a bit longer when an unexpected update gets pushed out (like 7.0.4). Also, then I'm forced to create a new "Master" backup based on the new iOS version or I wind up with all the iPads having to step through the setup screens.
Any ideas?

We were told by our Apple SE that as of right now, in prepare mode, when you enable supervision, AC will force the newest version of the iOS that the device supports. There seems to be no way around this. It's an issue you probably should take up with your district's Apple SE as it's biting a lot of people.

Restoring to an iCloud backup doesn't restore or update the iOS, but you have to be running the same iOS or higer as the device whose backup you are restoring to. Restoring the backup has to be done in the initial setup process. If you have any data on your phone now that is not in the backup that you want to save you'll need to do that first. Then go to Settings>General>Reset and tap Erase All Content and Settings. You will then go through the setup screens as you did when the phone was new. Can't I fake it out so it just leaves my ios as it is but restores files and settings? ios 4 doesn't really work well with the 3G models. They get slow and buggy. Isn't there some way to just put the ipsw file somewhere and point to it? Or, is there a way to just rip the ical info outof the backup files. That would work to.

You should be able to copy it over to your computer's iTunes via File > Devices > Transfer Purchases.
Audiobooks are a one-time only download from the store, so you may want to take a backup copy of it when you've copied it over to your computer

Hey guys, how can I update iOS without losing my media?
I've been told to sign into iTunes on another computer, authorize the computer in iTunes, then sync my iDevice before updating iOS. When I attempted that I got a warning message from iTunes saying the content on my iDevice would be replaced with the content on the computer so I backed out. I don't have my computer with me and I'd really like to sync my iDevice with another computer so I can update my iDevice to iOS 5.

If it's in recovery mode, anything on the phone is already gone. Restore the phone using iTunes, then restore it from your last backup. If you've been backing up on a regular basis as intended, you won't lose anything except what's changed since the last backup.

iTunes needs an internet connection to download the update if it has not already. Then it needs to verify the update with Apple servers prior to installation.
So in short, no, you do need at least some form of internet access to update.

if you have no back up in icloud or itunes the best you can do is sync with your computer and get back what you can from there

You can't. If your device qualifies for the most recent iOS version (your iPhone 4S does), that is the version that will be installed. If, on the other hand, your device was an iPhone 4 (not the S), the device does *not* qualify for iOS 8 so iOS 7 would instead be installed.

You can wipe the device without updating:
Settings > General > Reset > Erase All Content & Settings
I would be remiss not to mention that iOS 7.0.6 patches a security flaw.
If you choose not to update, your device will be at risk.

If you are currently running an iOS lower than 5.0, connect to your computer & click on the "Update your device using iTunes".
Tip - You may need to disable your firewall and anitvirus software temporarily. Then download and install the iOS update. After you update to iOS 5.x, the next update can be installed via wifi (i.e., not connected to your computer).
