Remove a stolen ipod identity from existing itunes account

I had my ipod stolen and I just got a new one. How do I replace/remove the old ipod's identity to make room for this new one?

No, you are not limited. You can have as many iPods connected to your library as you want.
You are thinking of the authorized computer limit... which is 5. You can have up to 5 of your own computers authorized to play your iTunes Store purchased tracks from your iTunes library at a time.

    - If you previously turned on FIndMyiPod on the iPod in Settings>iCloud and wifi is on and connected go to iCloud: Find My iPhone, sign in and go to FIndMyiPhone. If the iPod has been restored it will never show up.
    - You can also wipe/erase the iPod and have the iPod play a sound via iCloud.
    - If not shown, then you will have to use the old fashioned way, like if you lost a wallet or purse.
    - Change the passwords for all accounts used on the iPod and report to police
    - There is no way to prevent someone from restoring the iPod (it erases it) using it unless you had iOS 7 on the device. With iOS 7, one has to enter the Apple ID and password to restore the device.

    SYnce them to the iPod from your iTunes library.
    Go to iTunes>Help>iTunes Help>Sync your iPod.... and follow the instructions.

    You can sync as many devices as you want to the same itunes library, there is no limit. You can decided what content you want on each device & itunes will keep everything straight, by device, on subsequent syncs.

    On your computer's iTunes you should be able to edit the payment info on that account by going into the Store > View Account menu option and logging into the account, and on the account's details page there should be a payment link.  If you are doing it on an iOS device (iPad, iPhone or iPod Touch) then tap on the id in Settings > iTunes & App Store and select 'View Apple ID' on the popup - that should also give you a payments link on the account's page.

    I have several old device names/backups on my iTunes that I want to remove.  They were from old iPhones that we've turned into iPod's for my kids which we needed to create a new device name for them.  So now when I restore a device, I have a list of about 10 different names to choose from.
    How can I erase the old names/backups that we no longer use?  I still have 3 on there that I want to keep though so I don't want to erase all of them.

    The consensus on the net would seem to be that only "Mac Computers" count as "Devices" for the purposes of Authorizing and Deauthorizing for iTunes purchases you are talking about. It is also implicit in the article mentioned below:
    Furthermore, on the "Deathorize All" feature, from http://support.apple.com/kb/HT1420:
    " Note: You may only use this feature once per year. The Deauthorize All button will not appear if you have fewer than two authorized computers. If you need assistance on using this feature, please contact iTunes Store support via email (http://www.apple.com/support/itunes/store/)."
    I was NOT aware of that, and I just realized I'm at my stated limit of 5. Some people are saying that sometimes your mac may get counted twice (a bug somewhere in the chain). I didn't find a solution to this however, though I didn't look very hard since it is possible I reached the limit legitamitely.
    So apparently we can have as many iPod/phone/pad devices playing our purchases but only 5 macs, foolishly referred to in this instance by Apple as devices. This is obviously wording they should correct, as it has clearly mislead many people, including the both of us!
    roaminggnome (cute name), count against is exactly the phrase I used to search the net for an answer to this same question. A search that brought me here (same question, but yet unanswered), and other places. I'm surprised you couldn't  infer his/her meaning from context, you seem to strive for helpfulness (I see you're level 8). Some people use the phrase/s count toward(s) in the same manner, if that helps.

    But here's how to remove an iPhone from your iTunes account:
    Open iTunes on your computer, and go to Store > View My Apple ID in iTunes' menu.  Sign in, go to "Manage Devices", and remove it there.

    Begin by opening the iTunes program and going to the iTunes Store via the iTunes Store button in the top right.
    Once you're at the iTunes Store, click on the Sign In button at the top left corner (if you're not signed in) or on your account name in the same location (if you're already signed in).
    This will bring you to your iTunes account. In the top box, you'll see a section labelled Computer Authorizations towards the bottom. Next to it is a button that reads Deauthorize All. Click it.
    A window will pop up asking you to confirm that this is what you want to do. Continue.
    In just a few seconds, all 5 computers on your account will be deauthorized.
    Now, re-authorize just the computers that you still use and you'll be all set.
