We purchased a new imac from the Apple Store online which will arrive in a few days. Our G5 iMac has been sold and we would like to prepare it so that all personal information and files are removed before the new owner picks it up. Please assist us in removing anything of personal nature on it. We are leaving the application programs we installed in it.

If you want to leave the current OS and apps as is, you have to first remove all personal data files. You can create a new admin user account in System Preferences Users & Groups pane. Make sure it is Admin. Log out and log in to the new user account. After making sure everything works as expected from that new admin user account, delete the old user account(s). If you kept all of your user data in the user home folder, this should erase your personal data. Be sure to provide the user name and password for the new account to the new owner.
Note: It is possible that some personal data will remain, because you don't know it's there, such in cache, log files, and other files used by the OS and apps. Also, if you intentionally placed personal data outside of the user home folder, you will need to find and remove those folders and files manually.
To ensure the erased files cannot be recovered (using common data recovery tools), do the following:
Run Disk Utility.
In the sidebar, select the iMac's internal drive volume. Select the volume, indented under the drive, not the drive. It is named Macintosh HD, unless you renamed it.
Go to the Erase tab. Click the Erase Free Space button. Using the fastest option (one pass), it will write zeros over all the free space, which makes the data unrecoverable (except by highly specialized tools that most people do not have access to). If you are "paranoid," you can select to do more passes (takes longer). Click the Erase Free Space button. This can take some time, depending on the size of the volume and amount of free space.
You should provide the original discs that came with the Mac to the new owner.

Since you posted your question on the iPhone forum, I'm assuming you have an iPhone.
In that case, go to Settings...General...Reset, and select Erase all content and Settings.
This will remove all of your content and restore the iphone to factory settings.
I have done this myself before selling iphones.

Boot from the original OS installer disk and do an Erase & Install.
When the Mac reboots into Mac Setup Assistant you quit and shut it down.
It's now a brand new Mac... just like when you got it.

After I create say a word document, file it on my desktop and then shut down my machine. The next time I open up the MacBook the file icon has been removed from the desktop. I can still retrieve the file in a folder labeled with the month I created it. But why has the OS removed it from the desktop and how can I stop it happening?
It happens to alias icons as well!

You can use migration assitant which is located in the Utility Folder under Applications. The compters can be connected via ethernet, fire wire, or wifi. My recommendation is not to use wifi.
You run migration assistant on both machines and you can choose to transfer everything or just data.
Another way is to use migration assistant to restore from a time machine backup.

What version of iTunes are you running on your computer? You need to update to the current version.

On your computer's iTunes you should be able to edit your payment info by going into the Store > View Account menu option and logging into your account, and on your account's details page there should be a payment link. If you are doing it on an iOS device (iPad, iPhone or iPod Touch) then you could try tapping on your id in Settings > Store (Settings > iTunes & App Store on iOS 6+) and selecting 'View Apple ID' on the popup - that should also give you a payments link on your account's page.

It will be stored on your ipod.

I feel I've explained plenty what you must do but you aren't getting it.
All music on your old iPhone should be in your iTunes library on your computer. Transfer the music from your iTunes library on your computer to your new iPhone in the same way it was transferred from your iTunes library to your old iPhone - via the iTunes sync/transfer process.
Since you prefer the manual way, you must manually drag and drop the same 377 songs from your iTunes library to your new iPhone - in the same way the 377 songs were manually transferred from your iTunes library to your old iPhone.
Or you can sync which provides more options overall. Create an iTunes playlist for the 377 songs. Select Sync Music under the Music tab for your iPhone sync preferences with iTunes and choose selected playlists, artists, albums, and genres. Select the iTunes playlist below that includes the 377 songs followed by a sync.
