Retrieving exchanged iphone from Apple?

This past weekend I brought my iphone 4 with a shattered screen into the Apple store (on Michigan Ave in Chicago, if that's relevant). With the $150 fee, I had it swapped out for a new phone. When I got home, I realized that I hadn't synched my phone since December 17th (realizing that all the times since then that I had plugged it into my computer, I hadn't actually synched with my data). I would really like to retrieve my text messages and data from the past months...is there any way to contact apple and somehow get back my old phone just in order to transfer the last month of data? Or is this a lost cause?

It's unlikely since per Apple policy the Apple Stores generally send in failed hardware quite quickly, but you can ask. You'll have to call the Michigan Ave. store and see if by some chance the iPhone hasn't been sent in yet. If it has, then there's no way to retrieve it.

Apple doesn't do exchanges. Sell your 4S & use the proceeds to purchase an iPhone 5.

Of course it changed. A phone's IMEI number is unique to each phone. The IMEI number for a phone does not transfer to another phone.
Since your iPhone was exchanged under warranty without having the box and bill for the original purchase, you don't need it now either. The exchange under warranty remains under the warranty for the original purchase.

Apple did not begin selling an unlocked version of the iPhone 4S in the US until 11/11/11. I believe it went on sale only through the online store at that time. I'm not sure if it's available at retail yet.
What you purchased was a phone without a contract commitment. It is still locked to AT&T. AT&T will NOT unlock iPhones for any reason. Return it and get your money back, then use that to purchase an unlocked phone.

The No Service means there is a problem with cellular service. You mention wifi in your title. Which is it you are having trouble with? What happens when you switch on and off as you state in your post? Are you saying that wifi does not connect while at home either?

Basics from the User Guide are restart, reset, restore from backup, and finally restore as New. I suggest you try ALL of these steps if your phone continues to have problems.
If after ALL 4 steps your phone still doesn't work, you've no choice but to have your phone serviced by Apple. As you've found out, the iPhone warranty is NOT and has NEVER been international. You'll have to send your phone to someone in the country of purchase to bring your phone into Apple--and then to have that person send the phone back to you.

Was shipped today, October 8, but I don't know if this "GSM-CAN" means taht is locked or unlocked!

"GSM-CAN" means that it was a GSM iPhone sold in Canada. It doesn't indicate anything regarding lock status. If you purchased the iPhone from the online Apple Store, then to the best of my knowledge, they don't sell anything other than unlocked iPhones.

I think this is doubtful.
I don't believe Apple ships iPhones outside of any country where it is sold, regardless if sold as unlocked in a particular country. AFAIK, the iPhone sold in each country must be purchased at an Apple Store if there is one available, or via Apple's designed provider or approved sales outlet in each country.
