If an iPhone is officially unlocked by the original carrier or sold as unlocked from Apple, there are no risks. If it is hacked to provide unlocking, there are risks. (unstable, risk of Malware, unable to upgrade iOS)

You can call them to see if they have some in stock. The last time I visited an Apple Store they did have unlocked iPhones in the store, but stores inventory vary.
After looking at this it seems that they do not have any in stock at the Fifth Avenue Store.

There may be a defect in the phone. As you bought it in the US the only place you can get it looked at is in the US.
When you say you bought it new, unlocked did you buy it directly from an Apple store? If you did not it was hacked to unlock it, which could also be your problem. Apple stores are the only place in the US that sells legitimately unlocked iPhones.

Oh those Canadians, you just have to take what they say with a grain of salt.
The warranty on the iPhone, contract or not, is not world wide. If something happens to your iPhone I seriously doubt wherever you are in Europe that they stock Canadian unlocked iPhones. Worse, if you take it to an Apple Store in a country where the iPhone is locked then they can only replace it with a locked iPhone from their supply of replacement phones. If it is with a different cell provider than you use well, that's just too bad.
You would either need to return to Canada for service or send it to someone there who can take it in for you.

The ONLY way to get any carrier locked iPhone officially unlocked is through the carrier the phone is locked to. There is no other way to get an iPhone officially unlocked. So, contact the carrier your phone is locked to to see if they offer unlocking & what the cost/procedure is. If they don't offer unlocking or you don't qualify, then there is no way to get your phone officially unlocked.

Where did you purchase it from? There are lots of iPhones sold as "unlocked" which are carrier locked phones that were hacked and are not officially unlocked. These phones are subject to re-locking to the original carrier, particularly when updated.

If you mean a trade-in, Apple does not do that. See if your carrier does, or sell your current phone and buy a new one.

The process is contact your network supplier .
Ask IF they offer unlocking.
IF yes request the unlock and pay any fees requested.
Your network supplier then contacts Apple to request the White listing (Unlocking) of your phone on the iTunes servers.
Apple do this -It takes anything from 3 days to several weeks to complete.
On completion Apple confirms this back to your Network supplier (NOT YOU)
Your network supplier contacts you via email or SMS inviting you to connect your iPhone with your computer via the supplied USB cable and launch iTunes and follow on screen prompts through to the "Congratulations your iPhone is now unlocked" screen.
All these steps need to be carried out with the ORIGINAL SIM and by REGISTERED account holder used when setting up the phone.
Once the Congats...... screen has been reached you can swap out the REGISTERED SIM and replace with a compatible SIM on another network.
CAVEATS
Only the original SIM and Account holder can initiate an unlock- If you bought the phone used/second hand you CAN NOT UNLOCK through official routes
Once unlocked use of a Mobile Virtual Network SIM (For an unsupported carrier) may result in difficulties sending SMS messages.
You may have to go into Setting /Network/Cellular/Cellular Data Network and enter the correct settings manually.
Further caveat Cellular Data Network menu is SIM card dependant if its not supported you CAN NOT change the settings manually then you may need to contact the SIM card company - They can send a setup SMS if they support this process.

If you had already removed the device from 'Find My iPhone' in iCloud, then you jus tneed to powercycle the device in order to activate it.

If it has not been removed, then the activation lock is still active.
