Sending documents in Acrobat to get filled and receiving them back so you can read them

I send out a RFP to potential web clients that is created in Acrobat - they can fill it out, check boxes... However when they send it back, it's in an XML format I can't read. Please advise on what I need to do to get the form back so I can read it.
