You should be storing everything on your computer and/or cloud service.
Just sync them from there.

If you've been using the device as designed, contacts would be synced to a supported application on the computer or a cloud service, simply sync them back.
Otherwise, a backup should have occurred prior to the update and this hopefully contains your contacts. Restore the backup.

If you are referring to SMS/MMS messages, the ony way to get them back is to restore the device from a backup created prior to the messages being deleted.
Restores are all or nothing, so there's no way to restore only the messages.
If you do not have a backup, there is nothing that can be done.

You are correct, they do keep a record of texts sent and received and subscribers can access this information themselves using their online account.
They do do keep the content of text messages at all just like they do not keep copies of phone conversations. If the text message is deleted from the sending and receiving instrument it is gone. Getting a court order for the content of text messages from a provider would be a worthless endeavor as it is well known that information is not available.
If a text message has not been successfully delivered the system will continue to try to send it by accessing the senders device and resending the message; you are right they are not from cosmic radiation or echoes from the moon, they are from the device that sent the message.

Your notes should be stored in your backup, so if you have backed up the iPad and that backup does contain those notes that you deleted, you can try restoring from your backup. If you haven't backed up the iPad since you created those notes, they are gone.
If you backup with iCloud only, restoring from backup involves erasing the device and then going through the setup all over again and finally restoring from the iCloud backup. This article explains the process quite clearly.

If you backup with iTunes, connect the iPad to your computer, launch iTunes and right click on the device name on the left and select - Restore from Backup. But before you do that .... turn off auto sync in iTunes - without connecting the iPad - launch iTunes and go to Edit>Preferences>Devices and check the box at the bottom of that window in order to turn off auto sync.
Email messages are not stored in your backups.

Well, certainly if you had 3 years of photos you have been importing them off the phone to your computer as recommended. Just synch them back.

Did this back along to mine. Plug it into itunes on your pc (or Mac) and click on the ipod icon on the left hand side. When the device options come up on the main screen, click on restore. Follow the steps and it should restore to factory settings. If you had icloud activated on the ipod all previous purchases should be in the cloud and ready to download onto the ipod afte rit has been restored to factory settings, otherwise you'll have to download them all again. Group messaging simply puts all replies in one conversation in Messages. It doesn't prevent the behavior you experienced.
My suggestion which would be much easier in my opinion, is rather than do a text, send out an email and use bcc: , which will keep the audience hidden from each recipient.
Otherwise, if you're determinted to do only texts, the only way is to send your message to one person at a time. You can of course copy/paste your msg each time which might be helpful.
