This maybe the moment to change my Skype address for something with no "_" but before I do has anyone else had this issue and fixed it ?

I've got the same problem. Did you find out how to fix it? Holding the # key down does not work

Open the International preference pane and select the Input Menu tab. Check the Keyboard Viewer box in the scrolling window and the Show input menu in menu bar box. ( You can also check other boxes that may be useful for you.)
This creates a menu with the icon of the keyboard set you are using and lets you switch quickly. The Keyboard viewer works like KeyCaps did in the classic systems, where you can hold down any modifier keys and see what different keystrokes will give you. The Character Palette (activated from the same preference pane) also gives you access to those funny characters that can't be accessed from the keyboard. If you have a british keyboard then they might have changed it to a US keyboard in System Preferences > Language & Text > Input sources tab > check "british" and uncheck US

If you go into Facebook settings, in the app section under your account, and delete the skype from your facebook apps, it appears to fix this issue.

You cannot change the face of the key, but you can type £, as I just did on a standard North American keyboard. It's Option +3 (both keys).
Of course there are other key combinations. Go to Apple Menu / System Preferences / Language & Text. Select Input Sources, and check off Keyboard & Character Viewer. And at the bottom check off Show Input menu in menu bar.
Now when you click on the Character Viewer you see the keyboard. Now try different key combinations, like option + g. The keyboard will show you ©.

As well as Eric's suggestion (probably the easiest solution), you could add the English (UK) keyboard, by going to Settings > General and then either Keyboard or International. When a new keyboard is added, there is a globe icon to the left of the space bar: use that to change the keyboard. The £ sign on the UK one is where the $ sign is on the US one.

we do work a lot with currencies and that would come very handy.

In System Preferences-Keyboard select 'Show keyboard viewer in menu bar'.
Click on the icon that appears in your menu bar and select 'Show keyboard viewer'.
Now press opt/alt, ctrl, fn, etc... and it will show you all the characters available on your keyboard. Also try combinations like shift+alt/opt.
Apologies for the general answer but I don't know where you are or what international settings are set on your computer and hence what your keyboard layout is.

All the help on message boards says Alt/Option plus 3 should work. Not for me it doesn't.
I can't change it in system preferences.

Go to System Preferences>Languages & Regions>Keyboard (if you're running Mavericks anyway) and see which keyboard layout you're using:
I'm set for US - and that's where option + 3 produces the £ symbol.
