Please explain why u can not Install snow leopard on new 2011 Mac mini?

Actually You Can.  Use any late Macintosh that will run Snow Leopard and either boot from a 10.6.3 universal installer that been intalled on a hard drive (quickest) or boot from the UNIVERSAL OS X 10.6.3 DVD.  The new Mac Mini should be connected via FireWire in TARGET MODE to the host Macintosh.
Use disk Uitility to format the Mac Mini Hard Drive and install 10.6.3 on it. When it boots (still in target mode) it will be the boot drive for the host macintosh.
Then install 10.6.8 update and iLife 11 and Applejack (this will fix the install in the end).
Then run software update and carry out all updates that it indicates.
After that shut down and take the Mini off Target Mode and disconnect the firewire cable.
Restart the Mini and run software update again.  Note - the cursor may take any number of shapes at this stage but continue on.  Certainly you wil be asked to run software update OS X 10.6.8 supplemental which should fix the cursor problem.
Restart and hold dowm <Command><S> until a black screen with white writing appears.  Wait for it to scroll down to the end and at the prompt type applejack AUTO restart and then press <Enter>
Applejack will run 5 routines which may take some time and at the finish it will restart.
That should be it!
One codicil.  If you read the stuff that Applejack brings up you will see that half the processors are not working.  This is no big deal and does not seem to affect the operation at all.
The good news is that SL will run on a new Mac Mini which should satisfy a lot of users who have apps that are not yet Lion Compatible.

    Not sure where you're getting tangled here or how much you know about OS X Server 10.6, so...
    AFAIK, Snow Leopard Server wasm't available as a download, it was a separate DVD distribution. 
    Unlike more recent versions of OS X Server, the 10.6 server distributions were usually standalone DVD disks, as well. 
    (There is a slight wrinkle if your Mac needs a newer version of 10.6 than your server distribution; there was a different streaming upgrade process for that.  IIRC, the appropriate OS X client version was installed first, then you booted that client version and loaded the DVD and installed OS X Server.)
    But if you have a Snow Leopard Server distribution that supports your particular Mac Mini model, then boot the DVD, use Disk Utility from the Utilities menu in the bootable DVD environment, wipe the disk, and then install OS X Server.
    You'll need a 10.6 license key, if you don't already have that.

    There is no "perfect" solution to your problem.

    Installation of Snow Leopard Server is actively supported by all of the virtualization companies.  While it sold originally for $499 from Apple; you can now find it for about $125 or less on eBay.
    Installation of Snow Leopard client is not actively supported by any of the virtualization companies (with the sole exception of v4.1 of VMWare Fusion, which is now hard to find for obvious reasons and then can NOT be upgraded or this capability is lost). 
    These practices by these companies are a part of the common Urban Myth that the Snow Leopard EULA prohibits the virtualization of Snow Leopard in Lion or Mountain Lion.

    Plug the drive in and when you power up the mini, hold the c button on the computer keyboard while it boots with the restore disk in the dvd drive. After a minute or two, the computer will start from the dvd.

    If you have applications that you want to use that aren't compatible, you can retain Snow Leopard and create a new partition to install Mountain Lion on.

    The first question is whether or not your Mac Mini has an Intel processor. Do +Apple > About This Mac+ if you need to find out. It will tell you what processor is in your mini. (Snow Leopard can only be installed on Intel based Macs.)

    I need to buy a new MacBook pro, as my early 2008 model just died on a road gig (4 months out of warranty) but most of my drafting software has been found to be incompatible with lion, is it possible/simple to put snow leopard on a brand new MBP 15"?

    Yes. You can create a second partition on which to install a copy of Snow Leopard.
    To resize the drive do the following:
    1. Open Disk Utility and select the drive entry (mfgr.'s ID and size) from the left side list.
    2. Click on the Partition tab in the DU main window. You should see the graphical sizing window showing the existing partitions. A portion may appear as a blue rectangle representing the used space on a partition.
    3. In the lower right corner of the sizing rectangle for each partition is a resizing gadget. Select it with the mouse and move the bottom of the rectangle upwards until you have reduced the existing partition enough to create the desired new volume's size. The space below the resized partition will appear gray. Click on the Apply button and wait until the process has completed.  (Note: You can only make a partition smaller in order to create new free space.)
    4. Click on the [+] button below the sizing window to add a new partition in the gray space you freed up. Give the new volume a name, if you wish, then click on the Apply button. Wait until the process has completed.
    You should now have a new volume on the drive.
    It would be wise to have a backup of your current system as resizing is not necessarily free of risk for data loss.  Your drive must have sufficient contiguous free space for this process to work.

    They advice me to turn off my mac and unplug power by 15 seconds, after that turn it again. Now it works. Will see. If noice will come back I bring it to a service provider.

    With the little info you gave try:
    First - just connect only your monitor, keyboard, & mouse/trackpad. Reboot to see if that fixed it.
    Second - Best connections for a monitor to your mac mini 2011 would be HGMI or Thunderbolt (found in Apple monitors.
    Third - I'd contact Apple Support by phone.

    You'll need to provide some more information .... what current mac mini do you have? Click on the apple in the left corner of the menu bar, click about this mac, and what does it say for processor, memory, and os x version?
    When you say you have no DVD, do you have the mac mini server or is the DVD broken?
    You can't do anything with 10.6 Snow Leopard on a PowerPC mini, however, if it is an Intel-based mini, you could probably hook up the systems in target disk mode to install 10.6.

    Wow, I worked on my MacMini after watching the video.
    But BEWARE!
    That OWC video misses a crucial step! (I emailed them)
    My MacMini had a bit of "invisible" black tape holding the disk connector to the disk, very hard to see. When I pulled off the connector, it came apart !
    That bit of tape must be something Apple added, or some manufacturers added, but it really messed me up. I had to send my MacMini off to be repaired, at a cost about $200 including parts and labour.
