Strange behavior: New iPad changes me to 'me' in mail and notes.

My 80 year old mother liked my iPad so much that she had me get one for her last weekend. It is the 64 GB WiFi version. There are probably a dozen free apps on it so far, and I have synced her Outlook Express address book and Internet Explorer bookmarks on it.
Whenever she types the word me in mail or notes, it is automatically changed to 'me' with the apostrophe on either side of the word. How could such a strange substitution occur?
Any thoughts on what I should start looking for. Searching for "me AND iPad" here and in Google doesn't result in anything similar.

When she types me (without ' '), it will pop up a small correction suggestion box. She needs to tap the small x on that little popup to disallow the suggested change. When she does this, the ipad should learn to stop suggesting the change.

Additional things to try.
Try this first. Turn Off your iPad. Then turn Off (disconnect power cord) the wireless router & then back On. Now boot your iPad. Hopefully it will see the WiFi.

Another thing to try - Go into your router security settings and change from WEP to WPA with AES.

Why is 50GB of music gone? All music should exist on the computer. Only a fool would rely on a single device which could easily be lost or stolen to store their content on.

For the reminders app - just tap on an open space on the ruled paper window under the heading in order to create a new reminder. Or tap on the + sign in the upper right corner of the app. You do not have the + sign on the app?
For the calendars app to go Settings>iCloud>Calendars>On. Toggle the setting on and off and the + sign should appear in the lower right corner of the calendars app. Tap the + sign to create a new event.

Hold Sleep and Home buttons until the iPad restarts, so the message won't appear after restarting it

I was looking into the issue you are desribing, and found a great article for troubleshooting wifi connections with iOS devices. It's called iOS: Troubleshooting Wi-Fi networks and connections and can be found here: http://support.apple.com/kb/ts1398.
Start with this section, and work your way down if needed.
Basic troubleshooting
Tap Settings > Wi-Fi and turn Wi-Fi off and then on again.
Verify that you are in range of your Wi-Fi router or base station.
Confirm that your Wi-Fi router and Cable/DSL modem are connected to power and turned on.
Check whether other devices (portable computers, for example) are able to connect to the Wi-Fi network and access the Internet.
Update your Wi-Fi router to the latest firmware.For AirPort Base Stations, refer to this article for information about firmware updates. For third-party Wi-Fi routers, check the manufacturer's website for details on updating your firmware.
Restart your iOS deviceHold the On/Off button until "slide to power off" appears. Slide to power off your device. When it is off, press the On/Off button to turn it back on.

Audiobooks are not part of icloud.
They will only be where you put them. They should be on your computer. Sync them to the new device.

if it don't work on both wifi and 3g then likely it's the email account settings which are incorrect set
and you should go over them 1 by 1 with the guide from the email provider as how to setup their mail service
if it works over wifi but not 3g then likely your carrier blocks the port your mail provider require

If you're really trying to use Windows 2000, then that's the problem. As you'll see on the box, you need at least XP/SP3.

When you set up iCloud on a new device, you will get photos from Photo Stream (you will have to transfer them to the device), your contacts, calendars, notes, reminders and your iCloud mail address. All of this will be done automatically by iCloud when you log in iCloud on your device.
