Syncing iPhone 4S to New MacBook w/o losing Phone Data

So I have an iPhone 4S, and ever since I've had it I've used my old MacBook Pro. Well I just got a new MacBook, and I want to sync my old phone up with my new iTunes.
If I sync it, will I lose all of my info, including my apps and contacts? I'm fine with losing all of my music on my phone because I recovered all of my old music and have it on my new MacBook now, and I can just re-add music to my phone. I just really don't want to lose all of my apps (especially my notes, I have a lot of good stuff in there!) and contacts.
Is there a way to sync to lose ONLY music? Thanks!

You don't have to lose anything. I'm assuming that the entire iTunes library is on your old MacBook Pro... Go back to your old computer. Go into the Music folder and the iTunes folder should be there. Copy that entire folder to your new MacBook Pro. You can do this via an external hard drive, Thunderbolt, FireWire or USB (it doesn't matter which option). Open your iTunes after that and sync your phone. You won't have a problem.
The reason this works is that your phone will think it is synced with the old MacBook Pro because the iTunes library is now the same as your old computer.

    A manual backup will do what you want. Here's how to:
    Make sure your iTunes account is set up on your new Mac. Disable autosync in iTunes, connect your phone to your new computer and right click on it in the device list and choose backup.
    iTunes will backup your phone without syncing.
    Transfer your purchases (Apps and bought media) by choosing File->transfer purchases in the iTunes menu.
    When you connect your phone for the first time, all media content will be erased. But you can restore your settings and app data from your manual backup afterwards.
    Don't forget to set up at least one contact and event on your new computer to be able to merge calendars and contacts when you sync the phone for the first time.

    i transfered all my music and pictures from my pc to my mac
    but now i need to sync my iphone to my mac so i dont have to use my pc no more.

    everything is fine except that i dont wanna lose my contacts and my text messages.
    is there any way to figure this out.

    Text messages aren't included with the iTunes sync process except for being included with the iPhone's backup, and the same for contacts unless you are syncing contacts with a supported address book app on your computer, which must be manually selected under the Info tab for your iPhone sync preferences with iTunes.
    Before syncing contacts with the Address Book app on your Mac, enter one contact in the Address Book app on your Mac. This will provide a merge prompt with the first sync for this data, which you want to select.
    The same applies to calendar events before the first sync with iCal on your Mac.
    If you transfer your iTunes library from your PC to your Mac per the instructions included with this link, no iTunes content on your iPhone will be erased with the first sync with iTunes on your Mac.

    I just purchased a new MacBook Pro and I have an iPhone 5 that has been synced with my PC.  When I try and sync the iPhone with the new MacBook ti tells me that it will erase what is on the iPhone and replace it with what is on the MacBook.  I want to sync all that is on the iPhone with the MacBook and not delete what is on the iPhone.
    How do I do that without loosing any music, emails, photos, calender appointments, etc.?

    A device can only sync with one library at a time.  Ideally you transfer the library from the PC to the Mac so it is still syncing with the same library.

    Quick answer if you use iTunes' default preferences settings:  Copy the entire iTunes folder (and in doing so all its subfolders and files) intact to the other drive.  Open iTunes and immediately hold down the Option (alt) key (shift on Windows), then guide it to the new location of the iTunes Library.itl file in the moved iTunes folder.

    If you put it in the default location of Macintosh HD > Users > *User Name* > Music  then you don't even need to start with the option key held down, iTunes will automatically look for it there.  (Make sure there isn't anything already in the iTunes folder there that you want to keep since you will be replacing it with the one you are moving.)
    If you don't have the library anymore then it gets messy.  You will have to use third party software to transfer the phone contents to the Mac and rebuild your library there so its content matches that of the old library so you are syncin the content back to the phone.

    Your i-device was not designed for unique storage of your media. It is not a backup device and media transfer was planned with you maintaining a master copy of your media on a computer which is itself properly backed up against loss. Syncing is one way, computer to device, updating the device content to the content on the computer, not updating or restoring content on a computer. The exception is iTunes Store purchases which can be transferred to a computer.

    I have a new iPhone 4s and a new MacBook Pro.
    I have synced the iPhone 4s with my old MacBook.
    It won't now sync all of that data with my new MacBook Pro.
    I do not want to transfer all data from my old computer to my new computer.
    How can I move just iPhone 4s data?
    I have tried iExplorer to try and get the data directly from the phone,
    but I am not tech savvy to put the info. in the right folders of itunes, etc.

    Syncing to a new iTunes library or computer will erase your phone. Only if you back up manually before syncing, you can restore your device from that backup again. A manual backup does not include the sync process.
    Do this:

    I have a new Macbook Pro - still getting it set up - and I just noticed that, of the several hundred contacts I have on my iPhone 5s, only 14 or so found their way to the contacts app on the Macbook Pro? Ideas about why? (I checked my phone settings and I do have contacts "on" in iCloud, so that shouldn't be the problem.) Unfortunately, this is a time when Apple Care is "experiencing an unusually high volume of calls" so I'm not getting through...

    The issue is i dont have a backup of the stuff that was on my old mac, because my mac decided to crash before i could back everything up
    there are quite a few gigabytes of music on my iphone, and i just dont want to download them all again

    "Are you sure you want to sync apps? All existing apps and their data on the iPhone “Ryan's iPhone” will be replaced with apps from this iTunes library."
    What do I do? Any help would be greatly appreciated.

    Based on your post it sounds like you would like to sync your iBooks content with your computer. I have located an article that may help you in this situation. While you can sync this data with your computer you can also use the sharing button to send PDFs using various sources:

    As Bob says, any iMap service can do this. GMail can, iCLoud mail can too.
    Both of these can be used with Mail on any device.

    - The iTunes backup that iTunes makes included photos in the camera roll. If yo go to iTunes>Preferences>Devices what is the date of the backup? Is it when the photos were on the iPod? You have to restore from that backup.
    - What may have happened is that you backup the iPod after you restored the iPod but before restoring from backup. iTunes only keeps one backup and overwrites the previous backup with the changes.

    If they are photo stream photos, save them to your camera roll, then delete them from photo stream.  That will delete them from photo stream in iCloud and on any other devices/computers.  Of couse it won't delete them if they have already been moved out of the photo stream album download folder on the work computer.
    Then change your iCloud password so the old work computer no longer has access to your iCloud data or photo stream.  See http://support.apple.com/kb/PH2617.
