The App Store is a default app and cannot be deleted. First make sure it has not been disabled via restrictions. To check, head to Settings -> General -> Restrictions on the iPod and make sure there are no instructions in placing for installing apps.
Otherwise, do a spotlight search for it. While on your iPod's home screen, swipe to the right and enter in App Store.

The iPod backup that iTunes makes does not include synced mediai like apps and music. If those ore not in the iTunes library on the computer on which you performed the update they are lost.

Only way to get it back is to restore your phone from a backup, if those pics were included in that backup.
But most likely those pics are gone.
What you should've done was import http://support.apple.com/kb/HT4083 the pics to your computer and after you restored from your old backup, you could sync those new pics to your phone via itunes.

Just figured out how to get the SD version of HD movies to play on the iPod Classic. In the iTunes Store, look at the purchased list and down at the bottom where it lists the Total: # Movies, to the right is a checkbox [ ] Download HD When Available. Unless the device was backed up prior to restoring the backup from the iPod Touch, there is nothing to restore.
Just set up the email account again... it's not difficult, but you may need information from your corporate IT dept to set it up.
