Transfer ipad ios 4.2.1 to ipad 2 ios 5

I have just ordered an ipad 2 .
I currently have an ipad 1 running ios 4.2.1 and have a number of apps, books, documents on goodreader, music and photos etc.
How do I transfer these to my new ipad? Will the backup and restore work across different versions?

As long as you aren't trying to transfer from a higher iOS version to a lower version then yes they should copy. For the restore to work fully you will need all the relevant apps on your computer's iTunes - a backup only contains the content and settings from the apps and not the actual apps themselves, so the iTunes restore needs access to the apps in its library.
Also photos that were synced from your computer and music/films/tv shows are not included in the backup - as they should already be on your computer there is no need to duplicate them in a backup. As long as they are still on your computer you should be able to sync them to the new iPad

    Yes you can upgrade from 4.3.3 to 6.0.
    Your media - apps, games, music, photos, and so are not included in the backup. Your app data, settings, and many other things are included in the backup. After you update the iPad, you should sync with iTunes in order to put all of that content back into the iPad.  This is what I recommend doing - I do it myself every time I update my iPads, or iPod Touch.
    What you should do anytime that you update the device is to transfer purchases from the iPad into iTunes - File>Transfer Purchases - and you should backup the iPad as well. When you update the update the device, if something goes wrong, you can restore from the backup.
    If you have any other important files, you may want to transfer them to your computer as well, prior to the update.

    You can't transfer "templates" created in Pages on your Mac to your iOS device. Templates are special files with the extension .template as opposed to normal pages documents with their .pages extension. You can't add templates to the template library on your iOS device; you can only add documents to your iOS device and re-use and re-name them as psuedo-templates.
    In order for you to use the document you create on you Mac on your iOS device do the following (your iOS device needs to be connected to your Mac or connected to a power supply and using the same WiFi network as your Mac):
    1. In iTunes go to your device Apps pane > File Sharing > Select Pages as the App > Click Add and locate your Pages Document - if the file isn't immediately copied to your iOS device, click on the Synch button.
    2. On your iOS Device, open Pages and in the Document View (Thumbnails) tap the "+" button (upper left) and Add From iTunes - this will transfer the document into Pages and open the document.
    3. Without editing the document, return to the Document View. You can place this document into a folder of similar documents that you would like to keep as "templates" - label the folder with something meaningful like "Masters"
    4. To use the "templeate" in Pages on your iOS device, in Pages Document View > Edit (button upper right) > select the document (tap once) and when the Copy Icon appears (looks like two pages with a "+" sign) tap the Copy Icon - this will create a copy of your original "template" - rename it then you can edit, save, share, print, etc.

    Make a backup of your old iPAd to itunes or iCloud.
    Then restore from that backup when setting up the new iPad Air.
    The restore will put your data onto the new iPad.  (The Os will remain at 7).
    Folder structure is a little iffy. Since backups don't restore Apps, only data, you would still need to re-download the Apps to the new Air and as such would need to create the folders for them.

    Paired Bluetooth devices (which can only be used if restored to the same phone that did the backup).
