I successful purchased the upgrade and installed that.

It's not referencing your iTunes version. It's referencing your device's iOS version. An iPhone 3G has a maximum iOS of 4.2.1. If an app requires an iOS higher than that, it will not work on your iPhone 3G.

I am trying to download apps but all that happens is the icon appears with a "waiting" underneath it. Updates do the same and so I am not able to download anything. I have rebooted the iPad this hasn't helped. I am able to sync the iPad with my PC and this updates everything. I would however not have to do this constantly. With your machine you should have received a couple of disks, one of which has application software or even a separate iLife disk...use that to reinstall the iLife software and update from there.

I had several attempts, and finally left it over night. There seems to be no on-screen notification of what is going on, so one is blind. Eventually I went to iTunes App Shop, which told me that it had downloaded. I found an installation window (I don't know how) and started the installation, but it stopped; this happened twice. Finally it was installed and I was instructed to restart the machine.
It seems that everythings is undercover now! We just need a bit more patience and a lot more faith.

if I remember correctly the error code -1 indicates a hardware problem. In that case, you should take your iPhone to an Apple store and have them do some diagnostics.

You either need to be logged in or run the installer as an Administrator user.
If you already do that, can you post the exact message you are getting?
