Updating without losing music, pictures, notes...

I want to update my 3G but don't want to lose my music, pictures or notes.  My syncs used to be to another computer that crashed and now I am trying to update on a new Mac.  I don't want to lose these items off my phone. Can anyone help?

By design, the iPhone will synch with only ONE computer at a time.
Before synching, with your phone connected, you can open iTunes and File>Transfer purchases move purchased iTunes media to the computer.  This will not move any media you did not purchase through iTunes.
There is no supported way to move the other data over.  You'll have to see if there are 3rd party apps.
In this day an age, it's comprehensible that you didn't have a backup of your crashed computer.

    I assume that you want to update to iOS 5. You still need to connect to a computer and use iTunes to update to iOS 5. After that, you can set up iCloud on the device and backup to iCloud and even update any iOS software in the future over the air.
    Make an appointment at an Apple Store and ask a genius to update the iPad for you. They should take the necessary steps to ensure that you will not lose any content - as long as the content/music is purchased from iTunes. If is music imported from CD's, there is not much that you can do without a computer in order to save the music without having an iTunes library.

    Make sure your new computer is authorized in iTunes. Disable autosync in itunes, connect your iphone, right click on it in the device list and choose backup.

    Transfer your purchases the same way to copy all apps and bought media from the Store to your computer.
    Set up at least one contact and event on your computer to be able the merge your calendars and contacts after your device got wiped during the first sync.

    Music is one way only, from the computer to your device, unless you bought the songs in itunes and transferred your purchases.
    Apps can be downloaded again for free, in the US music as well. Downloading past purchases from the App Store, iBookstore, and iTunes Store

    iPods are not backups or data transfer tools.
    Move the music from the computer where it exists to the computer where you want it.
    Then sync the music to the iPod.

    Most Simple Back Up:
    Drag the iPhoto Library from your Pictures Folder to another Disk. This will make a copy on that disk.
    Slightly more complex: Use an app that will do incremental back ups. This is a very good way to work. The first time you run the back up the app will make a complete copy of the Library. Thereafter it will update the back up with the changes you have made. That makes subsequent back ups much faster. Many of these apps also have scheduling capabilities: So set it up and it will do the back up automatically.
    Example of such apps: Chronosync - but there are many others. Search on MacUpdate or the App Store

    I was trying to delete some podcasts from my ipod, and was following the directions on the help menu which told me to go to preferences and choose manual update, then delete. I tried it, and it didn't work. When I decided to go back to auto update, I received a message that everything on my ipod would be deleted and the update would be just what is on the itunes on that machine. I have more than one computer, and have itunes on each one. There are different songs on each computer. If I go to manually update on this computer, it will erase the songs I've put on from other computers. All this and I still have the unwanted podcasts. Can anyone help me to go back to auto-update without losing songs? If worse comes to worst I guess I'll have to update, lose the songs, and then re-update at my other computers. thanks.

    Afraid that's not possible. If you go to auto-update, the iPod gets cleared and replaced with the current contents of the iTunes library.

    Is your profile signature still valid (iMac, Mac OS X (10.7.5)?)
    Do you have a backup of your iPhoto Library? If not, make a backup copy now.
    What happened directly before this problem first occurred? did you upgrade the system? Install new software? Move your iPhoto library to a new drive? Run any cleaning applications? Did iphoto crash?

    iTunes includes an option to transfer iTunes content that was purchased/downloaded from the iTunes store from an iPod, iPad, and iPhone, but this is for iTunes content that was purchased/downloaded from the iTunes store only.
    First you need to authorize your new computer with your iTunes account with iTunes if you haven't already done so.
    With your iPhone connected and without syncing, at the iTunes menu bar go to File and select Transfer Purchases From - the name of your iPhone.

    Here is what you do:
    Open iTunes.
    Plug in your ipod.
    hold control and shift at the same time. this stops your ipod from updating automatically. Hold this until your ipod is finished docking.
    Then go to edit>preferences>ipod
    then change the setting from update automatically to update manually.

    Why do you need to update at all?
    In order to upgrade you will have to purchase a retail copy of either Tiger or Leopard neither of which are easy to come by, and they tend to be a bit expensive.  And, there's no assurance that the version of PS you now use will be compatible with a newer version of OS X.

    I have not updated my phone yet because I know it needs to be backed up first. However, I cannot do this in fear of losing everything on it if I sync to my new itunes. I am not really concerned with losing music, just do not want to lose pictures, notes, etc.

    First you need to copy the entire iTunes folder from the
    old computer to the new one.  You should also make sure
    that anything on the old computer that goes on the iPhone
    is present on the new computer. 
    If it is a Mac, this process is usually pretty easy by using
    Migration Assistant which will transfer all that stuff over to
    the new Mac.
    If you are using a PC, I will defer that to someone else for
    all but the iTunes stuff.  You will do the same thing on the
    PC, that is copy the entire iTunes folder to the new computer.
    Migration assistant is available to move things from a PC,
    but not sure how well that works.
    When openning iTunes for the first time, you will need to hold
    down the Option key on the Maccbook Air and you will
    be presented with a dialog box and you will select open existing
    library and navigate to it.  Failure to do this, will create a default
    library with nothing in it and you will have to move stuff again.
    So if all the data is the same, you should be able to sync
    just fine.
