My friend recently sent me $100 itunes gift voucher from Austrailia. I live in Ireland and I am getting an error saying I cannot use them.
Is there anyway I can redeem these vouchers?

Absolutely Yes. I do it. I have a US account along with my US registered credit card which I can use in the UK. And vice versa.
The key is your credit card and bank account need to be registered to the country of the iTunes account, not where you happen to be accessing the content from.

No, you can only connect to one Home Sharing account at a time. If you want to see the content of the other Mac's library you will have to turn off Home Sharing on the Apple TV and log back in with the other iTunes account.

I am British but have lived in Korea for the past eight years. I have an iphone 3gs so i installed iTunes on my wondows PC in Korea and listed my country as 'USA' to make sur eitunes displayed in English.
Now I am back in England and I installed itunes on a vista laptop that i am using here. Two days ago I bought an ipad 2 wifi 32 gig here in London and registered it on itunes that i installed on the laptop here in theuk; although i sued my itunes ID wich i had beenusing when living in Korea which is registered as 'USA' for the nation.
yesteday I bought a £25 itunes voucher here in England so i could by some apps from itunes. When i tried to log on to my itunes account to redeem it i was blocked because itunes said that my itunes voucher is a uk voucher and myh itunes account is a usa account.
I tried to change my nation to 'UK' in the options initunes bu this doesn't work. I also tried to uninstall and re install itunes and make a new account but it just auto reverted to my 'usa' registered account.
How can i redeem this voucher or get a refund. I sent this off to itunes support but wanted to ask here if you have any sollution.

To redeem the voucher, you would have to have a credit card with a valid UK billing address and you would have to be physically inside the borders of the U.K.
You can only use the itunes store from the country of your residence ( as proven by valid credit card billing address) and only while inside the borders of that country.
Gift cards/vouchers are country specific. Only gift cards from the country of your residence ( as proven by billing address of your credit card) can be redeemed.

Then I had someone buy me a US iTunes Gift Card. I was able to use that to buy the app, and sync it to my UK device.

Previously I lived in China, and had used my China Apple ID to purchase apps.
I am now living in the US, and registered a new Apple ID with US store. (I keep the China ID because I will go back several years later.) I will begin to use my new ID on my Mac, without deleting my previously purchased apps on the China store.
I am wondering if I can still keep updating these old apps? Someone has given a solution of using two or more Apple ID: when updating apps purchased in another ID, a notification will pop up and ask to type in previous ID and password; this would be fine for me. The problem is that my Mac will have apps in stores of different countries, so I am not sure if this will work.

Strictly speaking you are not supposed to do it that way. When you change countries it is intended you change the country association of your single Apple account. This avoids complexities with syncing devices with content from multiple accounts. You may also find you cannot log onto your account in China to do the updates, and are not supposed to in any case. This is from the Terms of Service (from the US TOS but likely same everywhere):
E.g., "The iTunes Service is available to you only in the United States, its territories, and possessions. You agree not to use or attempt to use the iTunes Service from outside these locations. Apple may use technologies to verify your compliance." - http://www.apple.com/legal/itunes/us/terms.html#SERVICE
When moving countries the best thing to do is make backups of all content from the other country so you have it when you move and change account country.

Several things here so let me attempt to clarify.
For iCloud the reason the contacts where removed from he other device is because you updated your contacts, in this case deleted them, and then iCloud updated the other device to match. By deleting the iCloud account on the device it will stop the device from using that iCloud account and therefore nothing will change on the other device. By using a seperate Apple ID you can still use the features of iCloud, Find My iPhone comes to mind, without your content (contacts, message etc.) merging with the other device
For iTunes, you cannot use two Apple IDs for one account however if you use the same account iTunes on your computer will keep the content on each device seperate very nicely. You can also configure the settings for iTunes and the App store on each device to keep the content from automatically downloading to the other device. What I meant by share apps and music is this. What happens if you find a game, lets say Minecraft, that you really like and it cost, as Mincraft cost, $6.99USD. You buy it and play for a while and then you realize that your husband really likes the game as well. If you both use the same Apple ID for iTunes he can download the $7.00ish game to his device at no additional charge. If you use seperate Apple IDs for iTunes well... it look like he will also be paying for the game to have it on his account. Same goes for Music and Movies

Create an iTunes credit by redeeming a gift card and it will be charged to your credit. From http://support.apple.com/kb/ht4874:

You can only buy content from your own country's store - if the music that you want isn't in your country's store then it's because the record company haven't granted Apple a license to sell it there. Is it available on other music purchase download sites that you have access to ?
